Red velvet cookies: My Love is Red ^^

 Valentines's Day is coming, and it will be great to bake for someone you love.

"だいすき" means I love You ^^
Not only for lovers, family members and friends will be happy to receive a wonderful homemade gift from you ^^. I think about baking something lovely for the Valentines's day too, and this cookie is the right answer (for me), red color always relates to passionate love, hehe. Actually you can stamp the cookie with any words or pictures that you like, this cookie won't puff after baking so the indentation will stay. 
Anyway the key is don't let the cookie soften before baking, you should refrigerate it until firm before baking, so the cookie won't spread much and it will be beautiful.
The taste of the cookies is not traditional red velvet, ^^, there is no cocoa in the dough, the taste is tangy but rich. Serve it with hot tea will be great and don't forget to whisper "I love you", haha. 

Red velvet cookies
16 pieces (5.5cm)

250g .............................. All purpose flour
125g ............................... Unsalted butter, cold and cut into small pieces
100g ............................... Granulated sugar
......................................... Pinch of salt
1 ...................................... Egg
1tsp ................................. Powder red food coloring
.......................................... Zest from 1 lemon
Filling
200g ............................... Cream cheese, soft
100g ............................... Icing sugar
80g ................................. Unsalted butter
......................................... Pinch of salt
Put the flour, the sugar, the salt and the red food coloring in a bowl of food processor, process until fully combined.
Put the butter into the bowl, process until crumbs formed.
Pour the egg into the bowl, process until the dough come together. 


 Put the dough between 2 sheet of baking paper and roll until 4 mm thickness.
Refrigerate for 1 hour until firm.
Cut into desired size and stamp as you wish ^^.
Refrigerate for 30 minutes before baking.
Preheat the oven to 180 °C
Bake the cookie for 10-13 minutes, don't let the cookies become brown.
Let them cool completely.
Make the filling by beating all the ingredient together until fully combined, sandwich the cookies with the filling.

    but i was wondering, since it uses cream cheese for the filling, will the cookies get soggy after some hours? according to your experience, how long will the cookies stay at its best?

    The cookies will be soften at room temperature, but keep it in the fridge can prevent this problem.
