Basil and Cherry tomato breads: Delicious savory treats

Actually my brother wanted to eat pizza, and he told me to make it for him ^^.

 I know that making pizza is not hard and I made it many times before, well, I wanted to make something else, haha. So rather than making big tray of pizza, these small bread can be delicious and replace the pizza too ^^. The different is there are a lot of taste in the bread, starting by chopping basil and caper and put into the dough with dried oregano, so each bite will be delicious even without the topping.
For the topping, it depends on your taste, you can use different kinds of ham or add different kinds of vegetable, it will be fun and delicious when you choose the thing that you like ^^.
Serve warm from the oven is the best, and you will be surprise how fast  they go. 



Basil and Cherry tomato breads
Makes 8 

300g .............................. Water
15-25g ............................ Basil, chopped
90ml .............................. Extra virgin olive oil
1tbsp .............................. Granulated sugar
1 1/2 tsp ........................ Salt
1/2tsp ............................ Dried oregano
475g ............................... Bread flour
1 tsp ............................... Caster sugar
1 1/4tsp ......................... Instant yeast
2tsp ................................ Caper, chopped

Topping
........................................ Tomato sauce
......................................... Cherry tomatoes
......................................... Coppa Ham
......................................... Mozzarella cheese,
......................................... Mayonnaise

 Mix together water and olive oil. 
Put the flour, the sugar and yeast in a bowl, whisk to combine, add salt whisk again. Pour the dried oregano, the chopped basil and caper into the bowl, follow by the water and olive oil mixture.

 Use large spoon (or pastry scraper) to mix everything together, and knead briefly to bring all the ingredients together.
Take the dough out of the bowl and knead, you will see the dough will be elastic after about 2 minutes.
Knead by using the heel of your hands to compress and push the dough away from you, then fold it back over itself. Give the dough a little turn and repeat. Put the weight of your body into the motion and get into a rhythm. Keep folding over and compressing the dough. Knead for 10-15 minutes or until the dough is soft, pliable, smooth and slightly shiny, almost satiny. But this dough is a bit sticky, use a bit of flour will help (1-2 tbsp)

Put the dough into a light buttered bowl. Let the dough rise in a warm place until double in size (can be 1 hour or 1 hour and a half check often depend on the temperature).
When the dough is ready, take the dough out of the bowl and cut into 8 pieces.
Roll each piece into a ball, then press it to to 10-12 cm round.

Preheat the oven to 200°C.
Let the dough rise for about 20 minutes.
Brush the top of the dough with tomato sauce, press the cherry tomato into the dough, follow by the Coppa ham.
Sprinkle the Mozzarella cheese on top and drizzle with mayonnaise.
Bake for 25-30 minutes or until golden brown.
Let it cool slightly before serving.
