Mini Cinnamon Bites: Small cinnamon buns

Because I didn't post bread recipes, it doesn't mean that I stop baking bread ^^. It's still one of my hobby.

I didn't try any new recipes lately, so I don't have anything to share with you, haha. Baking bread at home is good in many aspects, first it's relaxing, second you will have delicious and fresh bread to enjoy, and the last one you will be proud, when you tell someone that you bake it by yourself, haha.
This recipe is very easy to make, it uses all purpose flour and it means the kneading is easier (the all purpose flour contains less protein than bread flour, so you need less time to knead it). After adding the milk and egg into the flour mixture, try to mix it until the dough moistened before kneading the butter into the dough, or it will be hard to knead it until smooth.
This recipe makes small cinnamon buns ^^, that you will be happy to eat more than 1 piece. Serve it whole, so you can enjoy pulling each pieces out. Sharing it with your friends and family, having good conversation  and you will wonder how fast they will go.

Mini Cinnamon Bites
Makes 16 mini buns
 Dough
130g ............................. Whole milk
50g ............................... Egg
5g .................................. Instant yeast
85g ................................ Unsalted butter, soft
50g ................................ Granulated sugar
5g ................................... Salt
314g .............................. All purpose flour
Filling
120g ............................... Dark brown sugar
1/2tbsp .......................... Cinnamon powder
45g .................................. Unsalted butter, soft
.......................................... Pinch of salt
Icing
.......................................... Icing sugar
.......................................... Milk




Mix together egg, and milk.
Put the flour, the sugar and yeast in a bowl, whisk to combine, add and salt whisk again. Pour the egg and milk mixture into the bowl.
Use large spoon (or pastry scraper) to mix everything together, and knead briefly to bring all the ingredients together.
Take the dough out of the bowl and knead, you will see the dough will be elastic after about 2 minutes.



Add the butter and knead by using the heel of your hands to compress and push the dough away from you, then fold it back over itself. Give the dough a little turn and repeat. Put the weight of your body into the motion and get into a rhythm. Keep folding over and compressing the dough. Knead for 10-15 minutes or until the dough is soft, pliable, smooth and slightly shiny, almost satiny. But this dough is a bit sticky, use a bit of flour will help (1-2 tbsp)

Put the dough into a light buttered bowl. Let the dough rise in a warm place until double in size (can be 1 hour or 1 hour and a half check often depend on the temperature).

Mix the brown sugar, salt and the cinnamon powder together.
Line the 8 -inch baking pan with baking paper.
Take the dough out of the bowl, deflate by touch it lightly.
Roll the dough into 18 x 7 -inch. Spread the butter over the dough, and sprinkle the brown sugar mixture, press it lightly into the butter.
Roll the dough and pinching to seal, and cut into 16 pieces.

Arrange the pieces, cut side up, in the prepared pan in even rows.
Let the rolls rise for about 1 hour or until doubled in size.
  Preheat the oven to 180°C.
Bake for 25-30 minutes or until golden brown.
Let it cool slightly.
Mix the icing sugar with milk add the milk little by little until you get thick but pour able paste. 
Drizzle over the Cinnamon buns.

  1. i love cinnamon rolls.. but have always been afraid to attempt them, as i always have trouble handling the dough.. your cinnamon rolls looks fluffy perfect as always ^^ love your new blog design ^^

    Bread flour contains more gluten, it can make the bread chewier and it needs more water than the original recipe, but you can try. ^^ Add more milk until you get workable dough (about 10-20ml).
