The taste of the cookie will depend on the chocolate that you use too, so like I always said use the one that you like, and for this recipe, please don't use milk chocolate instead of the dark or it will be too sweet ^^.
Chocolate Fudge Cookies
Makes about 14 pieces
120g ............................... Dark chocolate
110g ............................... All purpose flour
1/3tsp ............................ Baking soda
1/8tsp ............................ Salt
75g .................................. Unsalted butter
120g ................................ Brown sugar
1 ....................................... Egg
1tsp ................................. Vanilla extract
Preheat the oven to 150°C
Line 2 baking sheet with baking paper or Silpat.
Sift the flour and baking soda together.
Melt the chocolate by putting the chocolate in a bowl over a bowl of hot water (don't let the bottom of the bowl touch the water).
Beat the butter and salt until soft, add the brown sugar and beat until combine.
Add the vanilla extract and egg beat until smooth.
Pour the melted chocolate into the butter mixture, beat until combine.
Pour the flour mixture into the bowl and fold until combine.
Use scoop #40 to scoop the dough onto the prepared baking sheet .
Bake for 16-18 minutes, or until set.
Let the cookies cool in the baking sheet for 5 minutes, then let cool completely over the wire racks.
