I think that love doesn't have to be so complicated, it's an easy and simple thing to understand just like this simple buttery shortbread ^^.

My mission in this month is to give you an idea to make happy and delicious Valentine's day, ^^, and it doesn't mean that you will have to spend your time and effort, just use your heart. Baking for someone that you care, is a great way to express your feeling too. Because this shortbread contains a lot of butter, so you have to be careful if you want your cookies to be lovely, refrigerate when they become too soft to cut and make sure that they are firm before baking. If the cookie dough is too soft the cookie will spread and lose its shape.
For the sugar, I use red color sugar mix with granulated sugar, to make it cute but you can use granulate sugar too (the cookie will be lovely too).
Pack them in a bag or a box, and give it to someone you love and don't forget to tell "I love you" ^^.
Buttery Shortbread
Makes 2 dozens
215g ................................... Unsalted butter100g .................................... Superfine sugar
1/2tsp ................................. Vanilla extract
260g .................................... All-purpose flour
1/8tsp ................................. Sea salt
100g .................................... Sugar, for sprinkle
Beat the butter in the bowl until the butter is smooth. Gradually add the superfine sugar, vanilla, mixing until light in color and texture.
Add the flour and salt using low speed until combine use your hand to knead briefly smooth.
Roll the dough between a sheet of wax paper until 5mm thick.
Refrigerate for 30 minutes or until firm.
Cut with 6cm round cutter and place on a lined baking sheet.
Refrigerate for another 30 minutes before baking.
Preheat the oven to 180 °C
Bake for 15 minutes until the edges are very lightly brown.
Remove from the oven and immediately sprinkle with granulated sugar (the sugar will not stick if the cookies aren't not hot).
Cool completely on the pan.

Do I just add a bit of cocoa powder if i want to make them into chocolate butter cookies?
