Blueberry and strawberry yogurt ice cream: everyone has a right to have blissful time with their ice cream



This one is really special, because it's a request from my sister ^^, she wanted me to make the yogurt ice cream for my niece.

Because the last time that they went to shopping together, she bought her little one an ice cream and she's love it. I just can't say no, hehe, I have to make it delicious, because children won't lie. If they don't like it I have to eat it by myself, haha.
I try to find the best recipe, and I have to say that I didn't thinking about health at all!!!, Finally I found the frozen yogurt base in ................... The ingredient list is different from other recipe, it contains cream cheese and whipping cream, it's a kind of ice cream that I look forward too. 
It's very easy to make too, but the most important thing is you have to prepare the yogurt base, by draining it in the refrigerate. For the fruit part, I find out that it's very versatile to use jam, hehe, I'm a bit lazy sometimes, but the result is not bad at all. Just melt some jam that you want to use and mix with fruit juice (mine is strawberry jam with blueberry juice), until it's not too thick. Drizzle it over the churned ice cream and you will get a lovely ripple effect.

Blueberry and strawberry yogurt ice cream
Makes 1/2 quart


500g ............................... Plain yogurt
170g ................................ Milk
1tbsp ............................... Cornstarch
2tbsp ............................... Cream cheese
1/4c ................................. Whipping cream
70g ................................... Sugar
30g ................................... Corn syrup
........................................... Jam of your choice melt and mix with fruit juice or water  
 Fit a sieve over a bowl and line it with two layers of cheesecloth (I use 1 layer of clean kitchen towel). Pour the yogurt into the lined sieve, cover with plastic warp, and refrigerate for 6-8 hours to drain. Discard the liquid and measure about 200g of strained yogurt, set aside.
 Whisk the cream cheese in a medium bowl until smooth.
Mix 2tbsp of milk with cornstarch in a small bowl to make a smooth slurry.
Fill a large bowl with ice and water.
Combine the remaining milk, the cream, sugar, and corn syrup in a saucepan, bring to a rolling boil over medium high heat, and let it boil for 2-3 minutes.
Remove from the heat and gradually whisk in the cornstarch mixture.
Return the mixture to a boil over medium high heat and cook and stirring about 1 minutes. Remove from the heat.
 Gradually whisk the hot milk mixture into the cream cheese until smooth, add the yogurt and blend well.
Let the mixture cool completely over the bowl of ice and water.
Refrigerate overnight.
Churn the yogurt base in the ice cream machine.
Put the ice cream in a box and drizzle with melted jam. Press a sheet of parchment paper directly against the surface, freeze at least 4 hours or until firm.
