Today is a bit better, haha, so I rush to the computer when I have time and try to finish typing it as soon as possible. This cookie is one of the item that I put in my ideal new year hamper (you can read about it and see other items in the basket, here).
I made it with the idea that, we need something savoury to enjoy too, and this cookie will be great to serve with some drink and will keep you (and other people) happy while talking all night long ^^.
I love the flavor of the Shichimi togarashi (Japanese chilli mix) so much I use it instead of the chilli flakes and paprika (so if you have other kinds of chilli you can use it). The amount of the chilli will depend on how hot you want, but I think it will be better to stay on a less hot side because you will be able to enjoy the biscuits more, ^^.
Chilli Biscuits
Makes about 40-50
175g .............................. Unsalted butter, softened
175g .............................. Cheddar cheese, chop or grated
5-8g .............................. Shichimi togarashi (Japanese chilli mix) or cayenne pepper
175g .............................. Plain flour
3/4tsp .......................... Salt
2tbsp ............................. Ice-cold milk (or water)
150g ...............................Nut of your choice
Mix together flour, chilli mix, and salt together.
Put butter, cheddar cheese and flour mixture into a bowl of a food processor, process until the mixture resemble breadcrumbs.
Add milk (or water) and process until smooth, take the dough out of the bowl of the food processor and stir in the nuts.
Spoon half of the dough onto a sheet of non-stick baking paper and roll it up into a cyrinder about 4 cm thick by 20-25cm long; repeat with the remaining dough on a second sheet.
Chill or freeze until firm.
When ready to bake, preheat the oven to 180°C.
Cut the dough into 1cm-thick slices and place them on a lined baking sheet.
Bake for 20-25 minutes until golden.
