Eton mess cupcakes: Strawberry meringue cupcakes

What will I do when I have strawberry in my fridge?, Well I bake a cake, hehe. This time I want to turn something simple into special, may be a meringue can help ^^.


 Actually I got the idea when seeing the Eton mess. A traditional English dessert consisting of a mixture of strawberries, pieces of meringue and cream, which is traditionally served at Eton College's annual cricket game against the students of Winchester College (information from Wikipedia). I think they will be great in the cupcake form plus they will be easier to eat, and they will be very cute to the eye too haha.


I use my beloved cupcake recipe (the one that I use many time with a little twist ^^ add a bit of this and that). I add more strawberry and take some of the cake out filled it with strawberry jam make it more strawberry.
The topping is very simple, plain whipped cream, crushed sweet meringue and fragrance strawberry. I love them to be lightly sweet but if you want your whipped cream to be sweet you can whip it with 1-2 tbsp of sugar. 
You can see that with a bit of adaptation, this simple cupcake recipe can become cute and special ^^,  the red and white color are get along very well together, do you agree with me.



Strawberry meringue cupcakes
Make 7 (7cm cupcake)

 50g .................................. Butter
80g .................................. Sugar
1 ....................................... Egg
.......................................... A pinch of salt
60g ................................... Crème Fraîche
100g ................................ Cake flour
1tsp .................................. Baking powder
½tsp ................................ Vanilla extract
4 ....................................... Strawberry, cut into small dice
Finishing touch
.......................................... Strawberry jam
200ml .............................. Whipping cream
........................................... Fresh strawberry, 
............................................ Basic meringue, crushed



 Preheat the oven to 170 °C
Place the baking paper in to the cupcake tins.
Sift the flour and baking powder together.





Beat the butter, salt and sugar until light and puffy, put the egg into the butter and beat to combine. Add the vanilla extract and beat to combine.




Divide the flour mixture into 3, put 1/3 of the flour mixture into the batter, stir with a spatula, when combine, add half of Crème Fraîche, follow with 1/3 of the flour, stir again then add the rest of the Crème Fraîche. Finish with the rest of the flour and the diced strawberry mix to combine.


Scoop the batter into the tins.
Bake for 20 minutes, or until the cake is spring when touch lightly.
Let the cake cool completely before frosting it.



Use the apple corer or small cookie cutter, to remove the center of each cupcakes. Fill with strawberry jam .


Whip the whipping cream until soft peaks form, decorate the top of the cupcakes with the whipped cream and decorate with strawberry and crushed meringues.
