The first time that I made this recipe was a long time ago, and I didn’t like it. The cake was not very bad, but the problem came from the fact that I don’t like the bitter orange marmalade (that someone gave me and I used it in the cake) and too sweet cake.
So, I made it again by using my favorite jam (I love Sweet Orange Marmalade from Smucker’s, but if you love your marmalade to have some bitter taste, use it ^^). I tried to adjust the sweetness in the cake too, and each time that I made it the sugar amount will be less and less, and I also add a bit of this and that to make this recipe more interesting and delicious.
The last time that I made it, I gone too far by reducing too much sugar, and the result was the too dry cake, the texture could be called bread than cake -*-. My friends who had a chance to taste it told me to adjust the recipe because they said that they love the taste but hate the texture, haha. So, I had to make it again, actually I promised myself that I will do it, because I love this recipe but it needs a bit of adjustment.
Finally after waiting for it, I come up with the right amount of sugar that won’t too much or too little and the texture of the cake that’s moist enough to be happy with. I love it ! You can have this cake with coffee or tea, ^^, or even with milk, the soft and moist cake will make everyone happy, I know that.
Ps. For the candied orange, you can use candied orange peel instead of it if you have it on hand, but remember to soak it in the Grand Marnier or hot water before adding them into the cake as the dried fruit will draw out the water from the cake and make cake drier.
Orange Marmalade Pound cake
Make 1 loaf (8x6.5x18cm)
100g ............................................ Unsalted butter
50g .............................................. Sugar
2 ................................................... Eggs, lightly beaten
120g ............................................. Cake flour
½ tsp ........................................... Baking powder
¼ tsp ........................................... Salt
40g ................................................ Crème Fraîche
100g .............................................. Orange Marmalade
50g ................................................. Candied orange, cut into small pieces
1tbsp .............................................. Grand Marnier
Mix Grand Marnier with Candied orange let the orange pump up for 30 minutes.
Sift the flour, baking powder and salt together, set aside.
Line the pan with baking paper.
Preheat the oven to 170°C
Whip the butter and sugar until light and fluffy.
Add the marmalade, beat to combine then add the eggs.
Put the half of the flour mixture and candied orange into the butter, fold to combine, fold the Crème Fraîche into the mixture and put the rest of the flour into the batter.
Put the cake batter into prepared pan, and bake for 35-45 minutes, or until the skewer insert in the cake come out clean.
