As soon as they were available, my sister ordered several kilos for me, haha. At first, I was worried I wouldn't be able to eat them all, so I tried making jam to preserve them. But it turned out to be so delicious that I had to order more to make jam with, hehe.
This jam recipe doesn't require pectin. The method is very simple. The only thing that requires a lot of patience, haha, because it takes about 30 minutes to simmer.
Maybe because nectarines have a lot of water, you don't get much jam per recipe. But for me, it's worth the time spent, so I wanted to share the recipe with you all. P.S. If you can't find nectarines, you can use peaches instead, as the texture of both fruits is very similar.
Nectarine and Cognac Jam
About 250-270 g
3 ................................. Nectarine or peach
180 g .......................... Granulated sugar
1 1/2 tbsp .................... Lemon juice
1 1/2 tbsp .................... Cognac or brandy
11/8 tsp ....................... Salt
Wash the nectarines thoroughly, then peel and remove the seeds. Chop it into small pieces. You will get approximately 315-330 g of nectarines.
Pour the chopped nectarines into a pot.
Put granulated sugar, lemon juice, Cognac (or brandy) and salt into the pot.
Stir to combine and leave it for 30-60 minutes.
Heat it over medium heat.
Once it boils, decrease the heat. If any scum rises to the surface , carefully skim it off.
For a smooth jam, mash it with a hand-held blender.
Simmer over low heat, stirring occasionally, about 30 minutes until it thickens .
Remove from the heat.
Pour into a sterilized jar. Close the lid.
Turn the bottle upside down and let it cool completely.
