Smash cookies


Desserts are probably a must-have for me during stressful times. 

I'm so busy these days, with so many things to do, that I really want to take a break. But at least I have baking to relieve stress.
Even though I bake, I don't have much time to film a proper video, so I post less than usual. But I hope I'll be able to get back to my old speed soon.

Today's recipe is cookies. If you like to eat raw cookie dough (like me, I know it's not good, but I can't stop myself), you'll love this cookie. 
It's a cookie that we bake until it's cooked but not set yet, then press it flat before letting it set on the tray. The inside of the cookie will be soggier than regular cookies, giving it the feeling of eating uncooked cookie dough. You can use less baking time for softer cookies (if you want).
As for the ingredients, we can adjust them to our liking. You can try changing from walnuts, other nuts, or dried fruits. You can add as much chocolate as you like, from 50 to 70 grams.

100 g ........................ Unsalted butter
70 g ......................... Walnut
50-70 g .................... Dark chocolate
1/2 tsp ..................... Vanilla extract
225 g ........................ Brown sugar
1 ............................... Egg (50g)
210 g ........................ All-purpose flour
1/2 tsp ...................... Baking powder
1/2 tsp ...................... Baking soda
1/8 tsp ...................... Salt



Melt the butter in the microwave and let it cool before using.

Roast the walnuts in an oven toaster for 7 minutes.

Coarsely chop the walnuts and set them aside.

Coarsely chop the chocolate and set it aside.

Add vanilla extract, brown sugar, and egg into the melted butter bowl.

Whisk to combine.

Sift flour, baking powder, baking soda, and salt into the bowl.

Add the chopped walnuts and chocolate.

Fold to combine.

Divide the dough into 8 pieces and roll each piece into a ball.

Rest in the refrigerator for at least 1 hour (up to 24 hours).

Before baking, preheat the oven to 200℃.

Bake in the 200℃ preheated oven for 10 minutes.

While the cookies are still hot. Press the cookies into a 2-2.5 cm thickness


Let it cool on the baking sheet.
