Chocolate cookie buns

I bake bread a lot lately, as my family member requests it.

Most of them were the recipe that I already posted in the blog, so, I don't have anything new to share, haha. 

Not only that I don't have anything to share but I also don't have a chance to try new recipes too. Finally, I had to tell them that I want to try something else, and hope that they will love the new recipe too.

Many (and many) years ago, this kind of bread was a hit in Thailand, and I really miss it ^^. So, the best way for me is to make it by myself.

This bread is delicious from the richness and sweetness from the cookie topping, but as it's your bread if you don't want to make the cookie, only the chocolate chips bread is delicious too.


Chocolate cookie buns
Makes 6 buns

Bread
200 g ................... Bread Flour
14 g ...................... Milk powder
2 g ........................ Instant yeast (2/3 tsp)
20 g ...................... Granulated sugar
3 g ........................ Salt
150 g ..................... Milk
25 g ...................... Unsalted butter
40 g ...................... Chocolate chips
48 g ...................... Salted butter

Cookie batter
50 g ..................... Unsalted butter
............................. Pinch of salt
40 g .................... Granulated sugar
50 g .................... Egg ( 1 egg )
35 g .................... Cake flour
10 g .................... Bread Flour
7 g .................... Cocoa powder
10 g .................... Honey



Put the bread flour, milk powder, sugar, and instant yeast into a bowl.
Whisk to combine.
Add the salt and whisk to combine.

Pour the milk into the bowl, and mix with a spatula.

Mix until fully combined.

Remove the dough from the bowl. Knead for 5 minutes.

Put the unsalted butter into the dough.

Knead for 5-7 minutes.

Put the chocolate into the dough.

And roll the dough into a ball.

Brush a bowl with the butter and put the dough into the bowl.
Cover and let it rises for 1 hour.

When the dough is ready.

Cut it into 6 equal pieces.

And roll each piece into a ball.

Let it rests for 10 minutes.

Press the dough with your hands and put the salted butter into the dough (8g per piece).

Wrap and pinch to seal the butter.

Let it rises for 30 minutes.

Meanwhile, preheat an oven to 190℃.

Beat the butter with salt until smooth, mix in the sugar and beat until combine.

Add the egg and beat to combine.

Sift the cake flour, bread flour, and cocoa powder into the bowl. Fold to combine.

Pour the honey into the bowl, and fold to combine.

Pipe the cookie batter over the bread dough.

Bake in the preheated oven for 15 minutes.


Let it cool completely before serving
