Lemon Thyme Muffins

Tangy with lovely fragrance, this muffin will brighten your day ^^.




Well, lemon is one of my favourite ingredients, I love both of its taste and it fragrance. But this time, it comes with honey and thyme, that makes it more intoxicated!.
Making muffin is very, very easy, and with this recipe that use oil instead of melted butter, you will find it a load easier, and quicker. If you love lemon, I really recommend making the Lemon in syrup and use it in this recipe, as it deepen the lemon taste. Lemon icing is an option (but I recommend it too, hehe), for giving the muffin more sweetness and tanginess and make the muffin more lovely too!

Lemon Thyme Muffins
8 muffins


Lemon in syrup
1/2 ................................ of Lemon
40 g .............................. Water
40 g .............................. Granulated sugar

Muffins
60 g ............................... Granulated sugar
........................................ Zest from 1 lemon
1 tsp ............................... Thyme
2 ..................................... Eggs
1 ..................................... Egg yolk
100 g ..............................  Rice bran oil
40 g ................................ Honey
1/8 tsp ............................. Salt
200 g ............................... Cake flour
1  3/4 tsp ......................... Baking powder
3 tbsp .............................. Lemon juice

Icing
60 g ................................. Icing sugar
2-3 tsp ............................. Lemon juice






I use rice bran oil
 Slice into 1-2 mm thickness
Put the water and sugar into a small pan. Place over medium heat. 
When the sugar melt remove from heat.


Pour the hot syrup over the lemon.


Cover and refrigerate overnight.

Preheat an oven to 200℃
Line 8 muffin tins with baking paper cup.


 Smash Thyme and lemon zest into the sugar.


  Put the eggs, egg yolk into the bowl, and beat to combine.


 
Pour the rice bran oil, salt and honey into the bowl. 


Beat to combine.


Sift the flour, and baking powder into the bowl, and fold to combine.


Fold the lemon juice into the bowl.


The mixture will be smooth.


Pipe into the prepared cup.


Place the lemon in syrup over the muffin.


Put the muffins in the oven and reduce the temperature to 180℃ 

Bake for 20 minutes.


Mix the icing sugar and lemon juice until desired texture formed.


Pipe over the muffin.


Decorate with a small piece of thyme before serving.
