Sweet Potato Angel Biscuits

 Last week my sister and brother went to farmer learning center.




Not that they will start their own farm, haha, but they just went to see their friend. And these sweet potatoes were my souvenir.
Well, there are many way to enjoy it, simply bake it is one of the best way. But as there are many of them, I think about turning it into delicious Angel Biscuits. When we use the word "Angel Biscuits ", it means there is a yeast in the ingredient list, as the biscuit will puff up with the power from both baking powder and yeast, so it will be very light. Anyway, as my biscuit contains sweet potato, it's not heavenly light, haha. Even it contains yeast, you don't have to knead the dough (so relax, it's very easy). Just throw everything into the bowl of the food processor, refrigerate and fold it, that's all you have to do, NO KNEADING!
Making biscuit is easy as long as you don't work the dough too much, so after each cutting, just press the dough together and cut it again until you use all the dough.

 Sweet Potato Angel Biscuits 
Makes 11-13 pieces


150g ....................... Sweet potato, peeled and cut into pieces
165 g ...................... All purpose flour
165 g ...................... Cake flour
90 g ........................ Granulated sugar
1 tsp ........................ Baking powder
1 tsp ........................  Instant yeast
1 1/4 tsp .................. Salt
115 g ....................... Unsalted butter (Cold)
115 ml ..................... Water
................................. Unsalted butter, melted for brushing the biscuit




   Put Sweet potato into a microwavable bowl, cover with plastic wrap.
Heat in a microwave (600W) for 4-5 minutes.


 Beat with hand mixer.


 Let it cool completely.


 Put both kinds of flour, sweet potato, sugar, and baking powder into a bowl of food processor, process until combine.
Put yeast and salt into the bowl, process to combine.


 Put the butter into the bowl, process until fine crumbs formed.


 Pour the water into the bowl.


Process until dough formed.

 Put into a bowl, cover and refrigerate for 1 hour.


 Remove from the refrigerator, press lightly.
Fold for 6-8 times.


 Until the skin formed.


 Cut with 5.5 cm round cutter.


 You will get 11-13 pieces.


 Cover and let them rest for 1 hour.
Meanwhile preheat an oven to 190℃


 Brush the top with melted butter.


Bake for 20-25 minutes.
