Chocolate Cake with Chocolate Mascarpone Frosting

 Simple baking is something that I like, no need for special equipment or technique, all you need is your time and a bit of attention ^^.

 As I always have Mascarpone in my fridge (don't ask me why, I have a habit of buying without thinking, haha), sometime I don't know what to do with it, and yes we can't eat Tiramisu everyday.
So I decided to use it as a frosting, but simple one is not good for me, I think about chocolate. Because the mascarpone has rich and creamy taste it goes well with something bitter or tangy ex: chocolate. So this time you don't need sugar thermometer to crate delicious buttercream, this one is very good both in texture and taste. I don't make mush icing sugar buttercream because I don't like the texture of it, but for this frosting, it's so smooth and creamy that you won't believe it made from icing sugar.
Forget about separating, you can beat this frosting (with mascarpone in it) without fear, the icing sugar and cocoa powder act like a glue so this time gentleness is not important ^^.
Serve this cake with a cup of hot coffee is the best as the taste of them come together so perfectly. 

Chocolate Cake with Chocolate Mascarpone Frosting 
Make 20cm cake

Chocolate Cake
115g ......................................... Unsalted butter
2 .............................................. Eggs
210g ........................................ All purpose flour
50g .......................................... Cocoa powder
2/3tsp ..................................... Baking soda (or rounded 1/2tsp)
1/2tsp ..................................... Baking powder
1/4tsp ..................................... Salt
120g ........................................ Granulated sugar
140g ........................................ Brown sugar
1 1/2tsp .................................. Vanilla extract
230ml ..................................... Milk
1 1/2tbsp ................................. Lemon juice or vinegar

Chocolate Mascarpone Frosting
225g ........................................ Mascarpone cheese
225g ........................................ Unsalted butter, soft
225g ........................................ Icing sugar
45g .......................................... Cocoa powder
30ml ....................................... Milk
1/4tsp ..................................... Salt

Preheat the oven to 180°C. 
Line 20x20cm cake pan with baking paper.
Mix the lemon juice (or vinegar) with milk and soft together flour, cocoa powder with baking powder and baking soda, set aside
 Beat butter with salt until soften, beat in both kinds of sugar. Beat until light in color.
Add the egg and vanilla extract, beat to combine.
 Put 1/3 of flour mixture into the bowl, fold to combine.
Add 1/2 of milk mixture into the bowl, fold to combine.
Put half of the rest of the flour mixture into the bowl, fold to combine.
Pour the rest of the milk mixture into the bowl, fold to combine.
Put the rest of the flour mixture into the bowl, fold to combine.
 Pour into the prepared pan.
Bake for 50 minutes or until the top spring back when touch lightly, and the toothpick come out with few crumbs. Let cool in the pan for 10 minutes.
Remove from the pan, let the cake cool completely.
Beat all the ingredient for the Chocolate Mascarpone Frosting together until fully combine.

Assemble:
Slice the cake into 2 layers. 
Spread the frosting in one of the layer then place another layer on top. Frost the top and side of the cake with Chocolate Mascarpone Frosting.

    The cake is lovely. By all purpose flour - what is the protein range that I should choose? Or can i substitute with cake flour?

  2. Mine is about 10 % but you can use cake flour too, but the cake will be more crumbly .
