Fraisecha: Strawberry and Matcha verrines

The taste of green tea powder (or Matcha) is one of my favorite. It can be used with many thing, ^^ and this time it comes with strawberry.

Actually I start thinking about it when my sister reminded me that I didn't make any green tea sweet lately (and it's my niece's favorite too). So, she told me to create something creamy  for my niece and herself to enjoy ^^.
Well it's will be less interesting to use only the green tea, I love to play it around. And my choice is strawberry, I use them together many time and happy with the result. The sweet, slightly sour and fragrance strawberry will be the main follow by the green tea that will linger in your mouth with the creamy Vanilla crème chantilly. This dessert is very easy to make, but this time it's very hard for me to take the photo ^^", because my niece try to put her finger in the glass and crying that "I want to taste it!!!". Finally I gave up and handed her a glass and a spoon. I didn't have the photo that I want but I got a lovely smile form my niece and it's one of the best thing for me, haha.


Fraisecha: Strawberry and Matcha verrines
Serves  5

Strawberry cream
70g ................................ Strawberry puree
70g ................................ Milk
70g ................................ Sugar
1tbsp ............................. Lemon juice
4g ................................... Gelatin sheets
200g .............................. Whipping cream
........................................ Red food coloring (optional)
Matcha crème anglaise
40g ................................ Egg yolks
60g ................................ Sugar
125g .............................. Milk
125g .............................. Whipping cream
1g ................................... Gelatin sheet
5g ................................... Green tea powder (Matcha)
Vanilla crème chantilly
200g .............................. Whipping cream
15g ................................. Granulated sugar
1/4tsp ............................ Vanilla paste

......................................... White chocolate for decorating

Make the Strawberry cream:
Bloom the gelatin in cold water.
Boil together milk, strawberry puree, sugar and lemon, then take out of the heat and stir in the gelatin. Let it cool completely and mix in the whipping cream and color if using.
Pour in the glasses and let them firm up.
Make the Matcha crème anglaise:
Bloom the gelatin in cold water.
Stir together the matcha, egg yolks and sugar. Boil the whipping cream and milk together, then pour it in the egg yolk mixture, beat all the time until fully combine.
Heat the mixture over low heat, stirring all the time. until the temperature reaches 82°C.

Stir in the gelatin and pass a mixture through a sieve, let it cool completely.
Then pour it over the strawberry cream (you won't use all of them, I use about 40g/glass). Refrigerate while you making the Vanilla crème chantilly.
Whip the whipping cream together with sugar and vanilla paste to make the Vanilla crème chantilly.
Pipe the Vanilla crème chantilly over the Matcha crème anglaise and decorate with white chocolate.

  2. I have tried a lot of your recipes with great success. How can i substitute leaf gelatine with powder? Do u just blend your strawberry to make strawberry purée? Thanks!

  3. You can use Gelatin powder, but mix it with water before mixing it with other ingredients. And You can make strawberry puree by blend it in the blender.
