The basic of this cookie is almost the same for every recipe, to make a new flavor, we have to add something to it, and I didn't have a new idea, ^^"
But after making Panettone, I used the leftover soaked dried fruit to make the scone, and it was delicious! So, I believed that using Orange liqueur-soaked dried fruit in the cookie would be a good idea.
I added the white chocolate into the cookie dough, not only the dried fruit. For each bite, you will get freshness from dried fruits and sweetness (and lovely fragrance) from the white chocolate too.
For this recipe, if you prefer a less sweet cookie, you can use only 80 g of sugar.
Fruity white chocolate cookie
Make 10-11 pieces
55 g ............................. Dried cranberry
55 g ............................. Candied orange peel
20 g ............................. Orange liqueur
85 g ............................. Unsalted butter
1/4 tsp ......................... Salt
1/4 tsp ......................... Salt
1/2 tsp ......................... Vanilla Extract
80-90 g ....................... Granulated sugar*
1/2 .............................. Egg (27g)
110 g .......................... All-purpose flour
1/2 tsp ......................... Baking powder
80-90 g ....................... Granulated sugar*

120 g .......................... White chocolate
*If you prefer a less sweet cookie, use 80g of sugar.
Preheat the oven to 180℃.
Put the dried cranberries, candied orange peel, and orange liqueur in a bowl. Cover and microwave for 1 minute.
Let it cool.
Put the butter, vanilla, and salt into a bowl. Beat until smooth.
Add granulated sugar in 2 additions
Beat to combine.
Pour the egg into the bowl.
Mix to combine.
Sift the flour and baking powder into the bowl.
Add the white chocolate and dried fruit mixture into the bowl.
Fold to combine.
Use a 5.5 cm scoop to scoop the cookie dough onto a baking sheet. You will get 10-11 pieces.
Bake in the 180℃ Preheated oven for 15-16 minutes.
Let the cookies cool completely on the baking sheet.
