This time, it is an Earl Grey tea flavor Madeleine, that's packed with lovely tea fragrance.
Not only the new flavor but I have a new pan too. It's the largest pan that I have now ^^. The size of the Madeleine pan is 6.4 x 6.4 x 3.4 cm. The pan's deepness is my favorite point. With a deep pan, your Madeleine will be very moist in the center (like a small cake).
You can bake this recipe in a standard pan too, but you will have to adjust the baking time to suit your pan size.
Earl Grey tea Madeleine
Make Large Madeleine Pan (6 pieces) 6.4 x 6.4 x 3.4 cm.
75 g ....................... Unsalted butter
72 g ....................... Cake flour
1/2 tsp ...................... Baking powder
2 g ............................ Earl Grey tea
1/8 tsp ...................... Salt
1................................ Egg
56 g .......................... Granulated sugar
17 g .......................... Honey
.................................. Butter for preparing the pans

Melt the butter in a microwave and let it cool to 30-40℃ before using it.
Sift the cake flour, Earl Grey tea, and baking powder together. Set aside.
Put the eggs, honey, salt, and, sugar into a bowl.
Beat at medium speed for 3 minutes.
Fold the sifted flour mixture in 2 additions.
Add the melted butter.
Fold to combine.
Cover and refrigerate for 1 hour.
Brush a large Madeleine Pan (6 pieces/ 6.4 x 6.4 x 3.4 cm.) with butter.
Before baking, preheat an oven to 200℃
