Herb and Garlic Flatbread


It's Birthday bread, haha.


But it's not a bread that has a glamorous look as the original Birthday cake. I made this bread for my sister's Birthday because she said that this year she didn't want to eat cake, and I thought we didn't have to use only cake!!!

It's a simple flatbread, that's loaded with a lot of herbs and garlic butter. I used thyme, rosemary, and parsley for my mixed herbs, but you can use other herbs too. 
Lately, I love to use a bread-machine for kneading the dough as it can knead (and proof) a small amount of the dough easily while I doing something else, haha. But you can hand-knead this dough if you want.

I was really happy with this idea because it's so delicious, and it made me feel less guilty than eating a whole piece of cake!!!




Herb and Garlic Flatbread
Make 30 cm Flatbread


Bread dough

250 g ................... Bread flour
1 tsp ..................... Granulated sugar
1 tsp ..................... Instant yeast
1/2 tsp .................. Salt
140 g .................... Water
2 Tbsp .................. Olive oil

Topping
1 1/2 Tbsp ............ Mix herbs (I use thyme, rosemary, and parsley)
............................... Flakes salt (I use Maldon)
................................ Rosemary leaves

Garlic Butter
50 g ....................... Unsalted butter
6 cloves ................. Garlic (Lightly pressed and sliced)


Put all the ingredients except yeast into a bowl of the bread-making machine.

Set the bowl in the machine and put the yeast into the yeast slot (my machine has a separate slot for the yeast).

Use the dough-kneading menu. Or you can hand-knead the dough too. 

After kneading let the dough rise for 1 hour. 

Roll the dough into a ball and place the dough over a piece of baking paper.


Roll with a rolling pin.

Into a 30 cm. round 



Fold the sides of the baking paper and attach them with a stapler. This will prevent butter from flowing to the sides when pouring butter over.


Spray with water, cover, and let it rise for 30-40 minutes.
Preheat an oven to 220℃


Make the garlic butter:
Put the butter into a small saucepan and place the pan over medium heat.


After the butter boils, turn off the heat, and add the garlic.


Let it cool.


When the dough is ready. Spray with water (to prevent the dough from sticking) and poke holes in the surface with your finger.


Sprinkle the mixed herbs over the dough. 


Place the rosemary leaves on the dough.
Sprinkle with Flake salt.


Spray with water. Bake in the preheated oven at 220℃ for 12-13 minutes.


Remove from the oven and pour the garlic butter over the bread while it is hot.


Let it cool slightly before serving.
