Actually, I really want to make the carrot cake in this way a long time ago.
Because every time that I make the carrot and I have to grate the carrot I always think that it would be easier if we put all the ingredients into the blender ^^.
And today I do it!
So, I don't have to tell you how easy it is.
Not only the cake batter but the frosting is also made in the mini chopper. I think that it's easier and the texture of the frosting is very good too.
I use a small pan for this recipe (as I told you that I rarely make a large cake by now), but the recipe is can be doubled or tripled without any problems.
Carrot cake
35 g ............................ Walnuts
75 g ............................ Cake flour
1/2 tsp ........................ Baking powder
1/2 tsp ........................ Cinnamon powder
1/8 tsp ........................ Salt
20 g ............................ Dried cranberry
100 g .......................... Carrot, peeled, cut into small pieces
45 g ............................ Brown sugar
45 g ............................ Rice bran oil
1 ................................. Egg
Cream cheese frosting
85 g ............................ Cream cheese
35 g ............................ Unsalted butter
45 g ............................ Icing sugar
1/8 tsp ........................ Salt
Preheat an oven to 170℃
Line a 14.5 x 9.5 x 7.5 cm. pan with baking paper.
Bake the walnut in the 170℃ preheated oven for 7 minutes. Chop and let it cool completely.
Sift the flour, baking powder, cinnamon powder, and salt together.
Mix the walnut and dried cranberry with the sifted flour and set aside.
Put the carrot pieces and brown sugar in a bowl of the mini chopper. Process until fine.
Pour the oil into the bowl and process to combine.
Put the egg into the bowl and process to combine.
Pour the carrot mixture into the sifted flour bowl.
Fold to combine.
Pour the batter into the prepared pan.
Bake the cake in the 170℃ preheated oven for 25 minutes.
Let the cake cool in the pan for 10 minutes.
Remove the cake from the pan and let it cool completely.
Put all the cream cheese frosting ingredients into the bowl of the mini chopper.
Process until smooth.
Frost the top of the cake with the cream cheese frosting before serving.
Oh gosh this fits right up my alley! Just a basic food processor for everything! I have a similar Bosch processor as well lol
