Nutty Chocolate Muffins


I didn't bake anything with chocolate for a long time ago.


I just realized that one box of the chocolate that I bought for baking was gone haha because I ate it every time that I opened the fridge ^^". So you can imagine why I didn't miss the chocolate baked goods at all.

After knowing the truth (about where all my chocolate has gone) I think that I should bake some. 

Anyway, it's not a complex recipe, a simple chocolate muffin that is very easy to make but it's packed with a load of flavor. With 70% chocolate, almond powder, and walnuts, this muffin is so rich ^^. Well, if you want you can add chopped nuts or chocolate to the batter too.



Nutty Chocolate Muffins
Makes 6 muffins



78 g ........................... Dark chocolate (70%)
40 g ........................... Walnuts
72 g ........................... Rice bran oil Shortening
1/4 tsp ........................ Salt
85 g ........................... Granulated sugar
75 g ........................... Egg
50 g ........................... Cake flour
35 g ........................... Almond powder
1 tsp ........................... Baking powder
10 g ........................... Cocoa powder
30 g ........................... Milk




Before baking, preheat an oven to 180℃

Brush 6 muffin pans (6.3x3.2 cm./cup) with shortening.

Melt the chocolate by heating it in the microwave for 1-2 minutes. Stir until smooth and let it cool before using.

Finely chop the walnuts.

Put the Shortening into a bowl with salt and beat until smooth. Add the sugar gradually and beat until fluffy.

Pour the melted chocolate into the bowl and mix to combine.

Add the egg gradually and mix to combine.

Sift the flour, baking powder, almond powder, and cocoa powder into the bowl. Fold to combine.

Pour the milk into the bowl.

Fold to combine.

Divide the batter into the prepared pans and top with chopped walnuts.

Bake in the 180℃preheated oven for 18 minutes.

Let the muffins cool on a wire rack.
