It's very easy to make and very, very delicious.
It's made from simple ingredients: egg whites, butter, almond powder, flour, and sugar. But the most important thing that makes this cake irresistible is the burnt- butter. Just boil the butter until it turns golden brown, and you get the lovely nutty fragrance (you can use this method in other recipes too).
Financier pans can be varied (and that is the reason that I love to collect them, haha), small, large, deep, etc. You may have more or less of the financier and don't forget to adjust the baking time to suit yours.
Classic Financier
Makes 9
70 g ....................... Unsalted butter
70 g ....................... Egg whites
16 g ....................... Honey
57 g ....................... Granulated sugar
1/4 tsp ................... Salt
28 g ....................... Cake flour
1/2 tsp ................... Baking powder
38 g ....................... Almond powder
For preparing the pans
.............................. Unsalted butter
.............................. Cake or bread flour
Turn the pan upside down, and tap to remove the excess flour.
Before baking, preheat an oven to 200℃
Until it becomes light brown in color.
Place the hot pan into a water-filled bowl to stop cooking.
Use it when the butter is about 30-40℃.
Put the egg whites, honey, sugar, and salt into a bowl. Mix until combined.
Sift the flour, almond powder, and baking powder into the bowl.
Mix until combined.
Pour the melted butter into the bowl.
