Chocolate Cranberry Cookies

When making cookies I always want to put a lot of chocolate or dried fruit into the dough.


Sometimes I don't know that do I really want to eat the cookie or the chocolate that I add into it, haha.
When adding a lot of nut or chocolate chip into the iced box cookie (the cookie that you have to shape into a log, then cut into pieces), the problem that I (and many people) face is the cookie will be crack as the chocolate chip (or anything that you add into the dough) become harden after freezing. So I think that if we love the taste of it, it's not wrong to change the method for shaping it.

This time I shaping the cookie by dividing it into a ball, then shaping it by pressing into a round cutter instead of cutting it. With this method, you will get cute cookies without any problem. 

Anyway, you may have to adjust to suit your cookie dough, for this recipe, I refrigerate the dough so it will be easier to handle ^^.
You can use the basic recipe and create many variations by using other kinds of dried fruit, nut, or chocolate too.



Chocolate Cranberry Cookies
Makes 15 pieces


65 g ........................ King Rice bran oil shortening
1/8 tsp ................... Salt
1/2 tsp .................... Vanilla extract
20 g ........................ Brown sugar
25 g ........................ Granulated sugar
1 tsp ....................... Water
85 g ........................ All-purpose flour
40 g ........................ Dried cranberries (Cut into small pieces) 
40 g ........................ Chocolate chips


I use King rice bran oil shortening.



Put the King rice bran oil shortening into a bowl with salt and vanilla extract. Beat until smooth.


Put both kinds of sugar into the bowl, and beat to combine.


Put the all-purpose flour into the bowl with dried cranberries and chocolate chips.

Fold to combine.
And refrigerate for at least 1 hour before shaping.

Before baking, preheat an oven to 180℃.
Line a baking sheet with baking paper.


Divide the dough into 15 equal pieces.
Shape into a 4.5 cm round shape by pressing the dough into a round cutter.

Bake in the preheated oven for 18 minutes.

Let it cool completely on the baking sheet.



Ready to enjoy!!!
