Black Forest Cake Box


Soft and creamy with the intoxicating fragrance of Kirsh and bitterness from chocolate, black forest cake is very addictive.




But this time, it went to the top ^^. Because this cake comes in a box, many layers of softness is not a problem. You can use a lot of soft whipped cream, creamy chocolate mousse, and light texture chocolate sponge cake, and don't have to worry that the cake will be collapse, plus you don't have to add gelatin to both cream and mousse too.
As it's so soft and light, after starting to eat it, you just can't stop (I'd done that, haha). It's very easy to keep and to give too. Because the box will keep the cake fresh, and you can give it as a gift easily too.
Actually, you can use other sizes of box for this cake, the one that I use can be served 1 (hungry man), or 2 people.

Black Forest Cake Box
Makes 4 (11.4 x 11.4 x 6.5 cm. Box) 


Chocolate sponge cake (30x30 cm. cake pan)

60 g ......................... Cake Flour
15 g .......................... Cocoa powder
4 .............................. Eggs
................................. Pinch of Salt
100 g ....................... Granulated sugar
40 ml ...................... Rich's Gourmet Trio (whipping cream)

Chocolate mousse

100 g ....................... Dark chocolate
100 ml ..................... Rich's Gourmet Trio (whipping cream)
160 ml ..................... Rich's Gourmet Trio (whipping cream)

Kirsh Cream

450 g ....................... Rich's Gourmet Trio (whipping cream)
45 g .......................... Granulated sugar
1-2 tbsp .................... Kirsch

Topping and filling

.................................. Dark chocolate
.................................. Dark cherries





  I use Rich's Gourmet Trio for this recipe.


Preheat the oven to 180°C. 
Line 30 cm x 30 cm pan with baking paper.
Sift the flour, cocoa powder together, set aside.

 Whisk the eggs with salt until lighten add the sugar gradually.


Until thick and lighten (Thick ribbon stage). 


Warm Rich's Gourmet Trio (whipping cream) in a microwave  (600W) 
for 40 seconds.
Take 1/2 cup of batter and mix with the warm whipping cream, fold to combine.


 Sprinkle the flour mixture over the egg batter and fold to combine (divided into 3 additions).

 Pour the whipping cream batter back, and fold to combine.


 The batter will be smooth and thick.

 Pour into the prepared cake pan, tap lightly to remove large air bubbles.
 Bake for 14-16 minutes until spring back when pressed lightly.


Remove from the pan, and let it cool completely.


Put the chocolate in a bowl.
Heat 100 ml of Rich's Gourmet Trio (whipping cream) in a microwave (600W) for 50 seconds, and pour into the chocolate bowl.


 Stir until the chocolate fully melted.
Let it cool completely.


Whip 160 ml of Rich's Gourmet Trio (whipping cream) for 5 minutes.


 Fold 1/3 of the whipped cream into the chocolate bowl.


 Then pour the chocolate mixture back into the whipped cream bowl.


 Fold to combine.


 Whip Rich's Gourmet Trio (whipping cream) with sugar and Kirsch for 5-7 minutes or until soft peaks formed.


 Pipe Kirsch cream into the box, then place the cherries over the cream.


Top with Kirsch cream.


 Place 1 piece of chocolate sponge cake over the cream, and pipe chocolate mousse over the cake.


 Pipe Kirsch cream over the chocolate mousse, and level the top.


Decorate with dark chocolate, and cherry before serving.
