My life is very slow (right now), well, it's the best side of working at home, I don't have to wake up early and drive to the office, because all I have to do is walking from my bedroom to my desk. Not that everyone can live like this, I know that many people don't have time at all, but I still hope that you can bake or cook for yourself from time to time, it's great for your mind and your health ^^.
After having a cup of coffee, I's still hungry but I thing something that's healthy might be good, and yes, I have load of time to play in my kitchen.
As I have a jar of homemade strawberry jam in my fridge, I think about turning it into something delicious (that I can eat with one hand when I'm working or reading). And the answer is bar cookie.
This bar cookie is packed with fibre, oat and fruit, plus it contains no dairy product too. You can use other kind of frozen berry, ie. blueberries or raspberries are great option, changing the jam is another choice of playing with the recipe.
Ps. I deleted many e-mail by mistake, (sorry that I didn't answer the e-mail), and one of them, I got a question about where to buy Rice bran oil shortening, so if you read this post now you can contact King Health Society for information (or buy directly from them).

Strawberry Jam Bars
Makes with 15x15 cm pan
95 g ..................... All purpose flour
70 g ..................... Granulated sugar
1/4 tsp ................. Salt
35 g ..................... Brown sugar
50 g ..................... Rolled oats
65 g ..................... Rice bran oil
1 tbsp .................. Water
............................. Strawberry Jam
100 g ................... Frozen Strawberries, cut into 1 cm pieces
1 1/2 tsp ............... Cornstarch
Preheat an oven to 180℃
Line 15 x 15 cm pan with baking paper.
Put Flour, salt, both kinds of sugar into a bowl, whisk to combine.
Put rolled oat into the bowl, whisk to combine.
I use rice bran oil.
Pour rice bran oil and water into the bowl.
Mix to combine.
Press half of the dough into the prepared pan, level the top.
Spread jam over the dough.
Mix the frozen strawberries with cornstarch.
Put into the pan.
Sprinkle the rest of the dough over the strawberry, and press lightly.
Bake for 40-50 minutes.
Let the bar cool into the pan for 20 minutes.
Remove from the pan and let it cool completely before cutting into pieces.

Deletefor using the rice bran oil shortening in the recipe, you will need to use only 70-80% of the weight of the butter, and add some liquid (water or milk) to balance the formula.
