Lamb Buns: Having fun in your kitchen

Christmas is coming, and yes, I'm in the mood to play ^^.



And the best place for me to have fun is in my own kitchen, hehe. Today I got an idea from the book : COOK BOOKS みんな大好き! 動物・果物 菓子パン, it comes with super cute idea for making breads. 
You may think that I rarely buying books now, but you're wrong, haha, I buy a lot as always, but don't use the recipe from the book much, some of them just for an inspiration (or I just want to buy it ^^"). I didn't use the recipe from the book, as I have the bread recipe that I like. But the how to make the face and body of the lamb is from the book.
I used black cocoa in this recipe to make the bread very black, but you can use any Dutch process cocoa for this recipe (add black colour if you want it to be black).
If you want you can sprinkle the cookie dough with sugar before making the pattern to make it more cute but I didn't add it as I don't want to make it sweeter.

Lamb Buns
Makes 10 


 Bread dough
190g ....................... Bread flour
10g ......................... Cocoa powder
3g ........................... Instant yeast
20g ......................... Granulated sugar
3g ........................... Salt
140g ....................... Milk
30g .......................... Unsalted butter 

Cookie dough
45g .......................... Unsalted butter
................................. Pinch of salt
60g .......................... Icing sugar
30g .......................... Egg
120g ........................ Cake flour

Decoration
................................. White chocolate (or white candy melt)


 Put bread flour, cocoa powder, sugar, and instant yeast into a bowl, whisk to combine.
Put the salt into the bowl and whisk again.


 Pour the milk into the bowl.


 Mix until fully moistened.


 Knead until smooth.
Knead the butter into the dough.


 Knead until smooth.


 Let it rest for 1 hour.


 Make the cookie dough.
Put the butter and salt into a bowl and beat until smooth.
Pour the icing sugar into the bowl and beat until combine.


 Pour the egg into the bowl and beat until combine.


 Mix the flour into the batter.


 Remove from the bowl and knead until smooth.


 Cut into 10 pieces.


 Roll each one into a ball.


 Cover with plastic wrap while preparing the bread.


 Cut the bread dough into 10 equal pieces.


 Roll each one into a ball.


 Let it rest for 15 minutes.


 Roll the cookie dough into 7-8 cm round.


 Cut the centre with 2 cm cutter.


 Cut the small round into 2 pieces.
Roll into 3 cm long, and roll to make horns.


 Cover the bread dough with cookie dough.


 Make small 1 cm patterns around the cookie dough.


 Stick the horns over the bread dough.


 Cover and let the rest for 40-50 minutes.

Meanwhile preheat an oven to 200C.
Put the breads into the oven, reduce the temperature to 180C
Bake for 10 minutes.


 Reduce the temperature to 160C.
Bake for 10 minutes.


 Let the bread cool completely.


 Decorate with white chocolate.


Ready to serve!
