Chicken Masala Curry

 I always love spice, but it's not the same as spicy food, haha.


As when I talk about spice, I think about India food, and it's one of my favourite kinds of food. But I don't have much chance to make it at home because when speaking of India food, my Mom and my sister always said "NO" -*-. 
I think that if you never tasted it before you may turn away from the thick aroma from load of the spice, but it's delicious (plus spice is good for you too, hehe). So when I saw a box of mixed spice (chicken masala mixed spice), I know it's time. Because it's hard to buy all the spice that you need for making chicken masala and use them as soon as possible to get the best fragrance. And, I make Chicken Masala for my family, to prove that India food is delicious, haha.
I use only 2 tbsp of the mixed spice but I think it depend on your taste and the spice that you use, you can use more or less. 
And if you ask me the result, the answer is "YES", as they (my family member), said it's delicious, even my 7 year old niece, she really, really loves it.
This time I use premixed spice, but I might bought the spice and make the mixed spice by myself next time, as I know that I will be able to use them frequently from now on ^^.

Chicken Masala Curry
Serve 3-4 



For marinading chicken 
500g ...................... Chicken thigh (no bone, and cut into pieces)
2 tbsp .................... Plain yogurt
2 tsp ...................... Vinegar (or lemon juice)
.............................. Pinch of Salt

Curry
3 tbsp  ................... Rice bran oil
2 ............................ medium Onion (Finely chopped)
10-12  .................... Cherry tomatoes (halved)
............................... half of 1 medium carrot (cut into 1-2cm pieces)
2tbsp ..................... Chicken Masala Powder (mixed spiced powder)
1/2tsp .................... Salt
500ml .................... Water
3 tbsp .................... Plain yogurt

For serving
............................... Parsley
............................... Bread, flat bread or cooked rice


 Mix chicken with yogurt, vinegar and salt in a ziplock bag, knead until combine.



 Let it marinade for 30 minutes.
 Place a pan over low heat, our the oil into the pan.
Put the chopped onion into the pan, cook until soft.
Put tomato and carrot into the pan.
Cook for 2-3 minutes.


 Put the chicken into the pan, cook for 2-3 minutes.


 I use 2 tbsp of Chicken Masala Powder (mixed spiced powder), but you may need more or less depend on your taste ^^.


 Pour the Chicken Masala Powder (mixed spiced powder) into the pan.


 Season with salt, and cook until fragrance.


 Pour water and yogurt into the pan.
Let it boil.


 Simmering for 15 minutes (stir from time to time.


 Spoon into a serving dish.



Sprinkle with Parsley and serve with bread, flat bread or cooked rice
