No-Bake White chocolate Cheesecake

 This recipe is for people who want to make a cake without turn on the oven ^^.


This rare cheesecake is very easy to make,  and it's very rich and delicious. The base of the cheesecake is cream cheese and white chocolate. You don't need gelatine because the white chocolate will set the cake but you have to give it enough time. Refrigerate it at least 10 hours and you'll be fine. 
Don't be panic when the white chocolate and whipping cream are separate after melting, pour it into the cream cheese bowl, and stir, they will combine.
I choose mixed berry sauce for this cake, but it's your choice ^^, you can go for blueberry, strawberry or a passion fruit. As long as it on a bit tangy side and it will go well with richness of the cake.




No-Bake White chocolate Cheesecake
Makes 12 cm cake



Base
65g .......................... Digestive biscuits
30g .......................... Melted butter

Cheesecake
100g ........................ White chocolate
25g .......................... Whipping cream
225g ........................ Cream cheese
10g .......................... Granulated sugar
1tsp ......................... Lime juice
1tsp ......................... Vanilla extract
................................. Pinch of salt

Mix berry sauce
100g ....................... Mixed berries
25-30g .................... Granulated sugar
1/4tsp ..................... Lime juice
1tbsp ...................... Water
1/4tsp ..................... Corn starch






 Crush the biscuits with rolling pin, and mix with melted butter.


 Pour into 12 cm pan, and press to level the top.


 Refrigerate while making cheesecake part.


 Put cream cheese into a bowl, and place it over a pan of hot water.
Beat until smooth, pour the sugar into the bowl and beat until combine.


 Remove from the hot water pan, pour vanilla, pinch of salt and lime juice into the bowl.


 Beat until smooth.


 Put white chocolate and whipping cream into a bowl.
And place it over a pan of hot water.


 Stir until melt.


 Pour the melted chocolate mixture into the cream cheese bowl.


 Beat to combine.


Pour into the prepared pan.

Smooth the top with a spatula then tap to smooth it again.
Refrigerate at least 10 hours before serving.

 Put the mixed berry, lime juice and sugar into a pan, place over low heat until boil.


 Mix the water and corn starch together.


 Pour into the pan, stir to combine, let it boil again then remove from the heat.


Let it cool before using.


 Warm the side of the ring with a blowtorch


Then remove the cake from the pan.
Pour the berry sauce over the top before serving.
