We went to family restaurant a lot when I was a child, this soup is one of my favourite. Warm (or piping hot) from the kitchen with a slice of bread and a lot of cheese, it look so special. The ingredient list is so simple, the taste of the soup come from the caramelised onion, and the cheese. Cooking it over low heat make the onion sweet, you may think 40 minutes is too long, but you don't have to stir it all the time, just stir it from time to time to prevent it from sticking to the pan is OK.
I love the taste and smell of Gruyère cheese, but if you want you can use any kinds of meltable one to suit your taste.
French Onion Soup
Serves 2
1 | Large Onion (peeled and thinly sliced) |
½tsp | Garlic (finely chopped) |
1 tbsp | Unsalted butter |
½ piece | Bouillon (any of your choice) |
500 ml | Water |
Salt and pepper | |
2 slices | French Bread (½ inch thick) |
Gruyère cheese | |
Melt butter in a saucepan. Cook onions and garlic over medium heat for 1 minutes, then lower the heat to lowest and continue cooking until golden brown, about 40 minutes.
Add water,
and bouillon; heat to boiling.
Reduce heat to low. Cover soup, and simmer for 20 minutes.
Toast the bread slices at 150 ° C just until browned, about 10 minutes.
Ladle soup into small, oven-safe bowls , place 1 slice toasted bread on top of the soup in each bowl. Then sprinkle the Gruyère cheese on top. Place soup bowls on a cookie sheet for easier handling.
Bake at 220 ° C, or gill under high heat for 8-10 minutes, or just until cheese is melted.
