Chouquette: Little choux pastry treats

 Tomorrow is the end of this year, ^^, and I think everyone will be busy as there are a lot of events and parties to attend.
My family hold a New year party tomorrow, it's a small party, that our family members and close friends. I think it's a good time to relax and enjoy. Every years, we meet new people, try something new, visit places. But there're still a lot of thing that we don't know or see, a place that we don't have a chance to go yet or people that will be our new good friends in the future. 
The possibility is exciting, everyone have a chance to be someone special if they just try ^^. When I said "special" it doesn't mean a big star, you can be special in your own way, and for the people that's close to your heart. 
Like baking or cooking for your family, it's one of the easy and great thing that you can show your love. Selecting the best ingredients and paying attention to every details, the person who eat the food will feel it. There are so many things that I want to do this year (well, I have a long list of what I want to do everyday too, haha) and I think that everybody are the same. So, I wish next year will be a great year for everyone, "May God bless you".
For this time, the recipe that I want to share with you is an easy treat, that you can serve them at a party. It's a small size choux pastry without filling. If you make choux pastry before this one is the same. By sprinkle the sugar (waffle sugar) over the choux pastry before baking, you add sweetness and crunchiness to the pastry. Baking it before serving as it will become wet when keeping overnight. For preparing ahead, you can pipe the Chouquette on a baking sheet, sprinkle with sugar, cover and freeze it,  and bake the day you want to serve.




 Chouquette 
Makes 40-50 Chouquette (depend on the size)


30ml ................................. Milk
30ml ................................. Water
50g ................................... Butter
2tsp ................................... Granulated sugar
1/8tsp ................................ Salt
70g .................................... Cake flour, sifted
3 ........................................ Eggs
........................................... Waffle sugar

 

  
Preheat an oven to 200C
Line baking sheet with baking paper or silpat.


 Put milk, water, sugar, salt and butter into a saucepan.
Place the pan over medium heat.


 When the mixture become boil, pour the flour into the pan.
Stir until combine.


 Place over medium heat and stir for 2 minutes.


 Remove from the heat, let the mixture cool slightly before adding the egg.
Add the egg into the bowl, you may not need all the egg (or you may need more ^^). 





When the batter is smooth and glossy, test with your finger, you will be able to stretch it.

 Put the batter into a piping bag, fitted with round tip.


 Have ready the waffles sugar.


Pipe into 3-3.5 cm rounds, and sprinkle the sugar over the Chouquette.
Bake for 20-25 minutes or until golden brown.
