Green tea Financier: 抹茶フィナンシェ

 I just came back from my vocation ^^, well had a very good time with my friends. 

 We spent time in Kyoto the place that's famous for Green tea, you can find it everywhere and in every dish, hehe. But I have to admit that it's the place for green tea lover, even the simple sweet like ice cream the taste of green tea is intoxicated.


 I end up buying 3 tins of green tea powder each of them are different in price and shop ^^. You don't need to use the most expensive green tea for baking or cooking, the price that you need to look for is around 750yen -2000 yen per 40g, as the heat from cooking or baking will effects the taste and color of it. Today I use the one that I got from Gion tsujiri (祇園辻利) The name of this green tea is 庵の友 (iori no tomo) the same one that they use for their sweet that they sell in the shop. The color is deep green and the taste is a bit bitter, good when pairing with buttery item. 
As I tried their financier (it's delicious but some part of the financier is a bit gummy), I want to crate it at home. 
Begin with simple recipe, I use about 10% of the green tea instead of flour and ground nut, just enough to let the taste of the green tea show but not too bitter to enjoy.
You need to let the egg white return to room temperature before making financier as the cold egg will make the butter firm up and the batter won't be homogenise, and don't over bake it or the financier will be dry. 
 I love the results, my financier is buttery, lightly sweet and full of green tea flavour, bitterness comes as a aftertaste (in a good way), you can serve it with a cup of tea or coffee, great for afternoon treat ^^. 
* I just know that if you want your green tea powder to stay fresh, don't buy a large tin and put the tin in a freezer, plus the color will stay green too.



 Green tea Financier: 抹茶フィナンシェ
Make 8 (6.5x6.5 cm piece)

 56g ................................. Icing sugar
40g .................................. Almond powder
40g .................................. Salted butter
60g .................................. Egg white (room temperature)
5g .................................... Green tea powder
15g .................................. Cake flour


 Put the butter into a small saucepan, heat over low heat until melted and milk segment turn golden brown and smell like toasted nut. (We call it beurre noisette).
Let the butter cool to room temperature. 
Preheat the oven to 170C.
Brush 8 small pans (6.5x6.5cm) with butter and sprinkle flour on top (tap of the excess flour).



 Sift the flour, almond powder, icing sugar and green tea powder together. 
 Pour the egg white into the bowl.


Whisk to combine.
 Pour the melted butter into the bowl.
 Whisk to combine.
Divide between the prepared pans, and bake for 12-14 minutes.
