Onion muffins: Simple bake, simply good!

 I always love warm muffins from the oven, because it's easy to make you can have that moment again and again, hehe.

 Today I stayed away from sweetness, something savoury would be great. Onion is one of my favorite ingredients, its taste will be sweeter after cooking. Muffin is a lot easier to make than bread, you don't have to worry about anything, the only problem that you will face is the muffin doesn't rise but as long as your baking powder's still working, everything will be fine. For the recipe that contains baking soda, sifting is required. Because whisking doesn't break the lump completely and the taste of the baking soda is not pleasant it should be neutralized by the acid ingredient.  
You can eat it with a bowl of hot soup ^^, but it's great on itself too.



Onion muffins
Makes 7 (6x5 cm muffin cups)

 40g ................................ Unsalted butter
1 ...................................... Onion, finely chopped
175g ................................ All purpose flour
2tsp ................................. Granulated sugar
1tsp ................................. Baking powder
1tsp ................................. Baking soda
3/4tsp ............................. Sea salt
1 C ................................... Full fat milk* 
1tbsp ............................... White vinegar or lemon juice*
2 ...................................... Eggs
......................................... Poppy seeds

* You can use butter milk instead of milk + vinegar.
Preheat the oven to  200°C
Have ready 7 muffin cups.
Mix the milk and vinegar together.


 Mix the chopped onion with the butter and heat in the microwave for 5 minutes or until really soft.
Mix the milk mixture with the onion mixture and eggs, whisk until combine. 
Sift the flour together with baking powder, baking soda into the bowl. Stir in the salt and sugar. 
Pour the milk mixture into the flour bowl, stir until just combined.
Spoon the mixture into the cups, sprinkle the poppy seeds over the muffins.
Bake for 14-17 minutes.
