It came from a question that I got from P' Nut, she asked me "Can I use 90% chocolate instead of dark chocolate?", And I told her "No".
It's the matter of taste, some people love it but many people think it too bitter to eat it on hand, but it contains less fat than ordinary dark chocolate, you can't use it without adjusting the recipe.
But I once read that you can use it instead of unsweetened chocolate, so I wanted to try it. I used very basic chocolate brownies recipe (Katharine Hepburn's brownies, you can search a story about the brownie story on the internet ^^. ) But it's not unsweetened chocolate, a bit of adjusting is needed.
Because the chocolate is very delicious (I love this brand "Lindt"), so you can imagine that the brownies are delicious too ^^. Anyway, the moment that it came out of the oven, I think that I did something wrong, the brownie is very dark in color, haha. But the taste is good and it's better after chilling, and as always bake it until just done (or under bake a bit, ^^), it's a great way to use the high quality chocolate, hehe.
90% Cocoa chocolate brownies
Make 8x8 inches brownie
100g ........................... Unsalted butter
75g .............................. 90% Cocoa chocolate
180g ........................... Light brown sugar
2 .................................. Eggs
1/2 tsp ....................... Vanilla
35g ............................. All-purpose flour
1/4 tsp ....................... Salt
100g ........................... Chopped walnuts
Preheat the oven to 160°C
Line 8-inch-square pan with baking paper.
Melt together the butter and the chocolate in a bowl over a pan of simmering water. Take the bowl off the heat.
Stir in the sugar, add the eggs and vanilla, and beat the mixture well.
Stir in all-purpose flour, salt and chopped walnuts, pour into the prepared pan.
Bake the brownies for 35-40 minutes.

My father-in-law bought a 90% Lindt bar to try it out, didn't like to just eat it so passed it on to me. I, too, did not like eating it 'raw' so Googled and found this recipe.
ReplyDeleteAwesome! These are honestly the best brownies I have ever tasted. This turned out to be more than just a way to get rid of 90% chocolate, it turned out to be incredible brownies :)
I made 2 modifications to this recipe:
ReplyDelete(1) As I have a slight allergy to nuts I replaced them with the same weight of Mornflake Very Berry Oatbran Muesli and sultanas.
(2) As I did not have any light brown sugar I used half dark brown sugar and half caster sugar.
The result was fantastic! A slightly crunchy top and beautifully soft inside. Absolutely gorgeous brownies which I shall definitely make again.
I have made these brownies three times now, I also used two types of sugar and missed out the nuts and vanilla. My husband son say they are delicious.

These brownies are out of this world. I used coconut sugar instead of brown sugar, and whole wheat flour instead of all purpose flour. They still came out flawlessly! I was told by various people that these were the best brownies they've ever had.

ReplyDeleteI have tried the 90% earlier and it's turned out very delicious.
You need to reduce sugar (I think using only 160g of it will be OK)when using 70% chocolate or it will be too sweet.
