Muffin is very easy to make, you need only 2 bowls, ^^, one for dry ingredients, and the other one is for wet, and all you have to do is mix them together (lightly, until just moisten), that's all.
Many people face the problem, that the muffin is tough, it can come from the mixing, you don't have to mix until smooth, (you will activate the gluten too much) just moisten all the ingredients, they will come together when they get into the oven.
Anyway, don't expect it to be like the cupcake, the texture is a bit different, but I think it's quite additive, hehe.
Well, I finish one muffin while typing this post, and I think that another piece will be great too.
Cranberry and pecan muffins
Makes 8
150g ............................ Plain flour85g ............................... Sugar
30g ............................... Almond powder
12g ................................ Baking powder
100g ............................. Dried cranberry
50g ............................... Pecan, chopped
....................................... A pinch of salt
1..................................... Egg
160g ............................. Whipping cream
....................................... Pearl sugar
Preheat the oven to 170 °C
Place paper cups in muffin tins
Put flour, sugar, almond powder, baking powder, salt, cranberry and half of the pecan in the bowl, whisk to combine.
In another bowl, whisk egg and whipping cream together.
Pour the egg mixture into the flour bowl, fold until fully moisten.
Scoop the batter into the prepared muffin tins.
Sprinkle the top of the muffin with the rest of the pecan and pearl sugar.
Bake for 23-27 minutes, or until the toothpick insert into the center come out clean.
