Lately, I really love this biscuit.
It has been popular for a long time, but now both the biscuit and the spread are easy to find, so I can't help but use it to make something delicious.
Lotus Biscoff cookies have caramel and cinnamon fragrance. The cookies are delicious to eat (by themselves), especially when eaten with coffee. But this time, I'm making them more delicious by turning them into cheese sandwiches.
The base of the cream cheese filling is the same as regular cheesecake, except that we don't bake them but cook them in the microwave.
There are some things to be careful about when making desserts made with a microwave:
1. Each home's microwave may have different power levels, so the time given may vary.
2. The heat may not be even, so stirring will help the dessert cook evenly.
Therefore, if you look at the recipe, you will see that I stir it both before pouring it into the mold and after putting it in the mold because the center of the mold will be difficult to set. If we keep microwaving it until the center sets. The sides will become gummy in texture.
For the taste, I make it a bit on the salty side. The salty taste will balance the richness and sweetness of the sandwich. It's so addictive, especially when eating it with coffee.
For this recipe, I use small cookies in a pack of 25 pieces (the size is about 3x6 cm per piece).
Biscoff Cheese Sandwich
Make 12 Sandwiches
150 g ................. Cream cheese
1/2 tsp ............... Salt
45 g ................... Granulated sugar
1 ........................ Egg
100 g ................. Whipping cream
15 g ................... Cake flour
2 tsp ................... Lemon juice
65 g ................... Biscoff Spread Crunchy
24 pieces ........... Biscoff Biscuit
25 g ................... White chocolate
Have ready an 18x18 cm glass pan lined with baking paper.
Beat the cream cheese with salt until smooth. Add the sugar and mix to combine.
Add the egg and beat to combine. Pour the whipping cream into the bowl and mix to combine.
Sift the cake flour into the bowl. Mix to combine.
Pour the lemon juice into the bowl and mix to combine.
I use Biscoff Spread Crunchy type.
Mix Biscoff Spread Crunchy with 25 g of cream cheese filling mixture.
Mix to combine and set aside.
Cover the bowl with cream cheese filling mixture and plastic wrap. Heat in the microwave (600W) for 2 minutes.
Mix to combine.
Pour into the prepared glass pan. Heat in the microwave (600W) for 1 minute.
Pipe the Biscoff and cream cheese mixture
Heat in the microwave (600W) for 1 minute.
Mix by dragging the batter from the center to the sides.
Heat in the microwave (600W) for 1.30 minutes
Mix by dragging the batter from the center to the sides.
Smooth the top. Let it cool completely and refrigerate until it is firm enough to cut.
Brush the Biscoff Biscuit with melted white chocolate.
Refrigerate until the chocolate is set.
Cut into 3x6 cm pieces (12 pieces)
Place the cream cheese filling on the biscuits. Then place another biscuit on top. Press gently to stick to the filling.
Refrigerate until the filling is set.
