White chocolate and Macadamia bars

 
When seeing a square piece of baked goods, it's not easy to tell if it's a cake or a cookie.


Most of us will think about cake, right? But this time, it's a COOKIE!! It's a kind of cookie called a bar cookie, a cookie that is baked in a pan and cut into pieces. 
The texture of the cookie is close to a brownie (or blondie) but we don't add melted chocolate into the batter. So, the main point you must pay attention to is the baking time, as when you bake brownies. If you want the cookie to be moist and fudgy, don't overbake it. 
This time I used white chocolate and macadamia, they give the cookie a lot of richness and sweetness. But I think it's not enough, I wanted my cookie to be more addictive. The key ingredient that makes the cookie more delicious is salt. This recipe contains a bit more salt than others, saltiness adds more depth to the taste, and I hope you agree that this cookie is so good after eating this cookie bar!


White chocolate and Macadamia bars
Make 9 bars


50 g ............................. White chocolate
55 g .............................. Macadamia nuts
1/4 tsp .......................... Salt (A)
80 g .............................. Unsalted butter
1/2 tsp .......................... Vanilla extract
1/4 tsp .......................... Salt (B)
60 g .............................. Granulated sugar
65 g .............................. Brown sugar
1 ................................... Egg
100 g ............................ All-purpose flour
1/4 tsp .......................... Baking soda


Before baking, preheat an oven to 180℃ 
Line a 15x15 cm pan with baking paper.

Bake the Macadamia nuts in the toaster oven for 5 minutes. 

Coarsely chop the nuts.

Mix them with 1/4 tsp of salt (A), and set them aside.

Coarsely chop the chocolate and set it aside.

Beat the butter with salt and vanilla until smooth.

Put both kinds of sugar into the butter bowl and beat until fully combined.

Add the egg.

Beat until smooth.

Sift the flour and baking soda into the bowl.

Add 40 g of macadamia nuts and 40 g of white chocolate into the bowl.

Fold to combine.

Put into the prepared pan and smooth the top.

Sprinkle with the rest of the nuts (with the salt) and the rest of the white chocolate.

Bake in the 180℃ preheated oven for 25-30 minutes. Let it cool in the pan for 5 minutes.

Remove from the pan and let it cool completely on a wire rack.
