Having a cookie is having happiness!
So, I have to bake cookies almost every week, it's a great time for me to try new recipes or make something I want to eat ^^.
This week, I made a mini-size green tea cookie (about 3-3.5 cm. after baking), this simple not too sweet butter cookie was packed with a lot of green tea not only in the cookie dough but also in the ganache.
Because it's so small, it's not easy to stop eating it, haha another benefit of the tiny size is you can enjoy it after refrigerating as it won't become hard.
The filling for this cookie is chocolate ganache, I use hard ganache (or use less liquid when making the ganache), so the ganache will be firm enough to stay at room temperature (anyway, if your room temperature is very, very hot, I suggest keeping the cookie in the fridge, ^^).
If your kitchen is too hot the ganache will need a longer time until it becomes firm, you can place the bowl of the ganache over ice and stir slowly until it is slightly thickened to speed the time up.
Green tea cookies with chocolate ganache
Makes 22 sandwich cookies
Cookie
50 g ......................... Unsalted butter
1/8 tsp ...................... Salt
40 g ......................... Icing sugar
25 g ......................... Egg
70 g ......................... Cake flour
5 g ........................... Green tea powder
Ganache
50 g ......................... White chocolate
1 g ........................... Green tea powder
20 g ......................... Whipping cream
Before baking, preheat an oven to 170℃
Put the butter and salt into a bowl and beat until smooth.
Sift the icing sugar into the bowl and beat until light in color.
Add the egg gradually and beat until fully combined.
Sift the cake flour and green tea powder into the bowl.
Fold to combine.
Fit a piping bag with a 1 cm star nozzle and put the cookie dough in the bag.
Pipe the dough on a baking sheet lined with baking paper. Pipe into a 2.5 cm. round. You will get about 44 pieces.
Bake in the 170℃ preheated oven for 14-16 minutes.
Let the cookies cool completely.
Melt the white chocolate in a 600w microwave oven for 1.30 minutes.
Stir until completely melted.
Sift green tea powder into the chocolate bowl and stir to combine.
Warm the whipping cream in a 600w microwave oven for 15 seconds.
Mix in the whipping cream gradually.
Let it cool and rest until thickened.
Put the ganache into a piping bag and pipe the ganache over the cookie.
Sandwich with another piece of cookie and press lightly to stick them together. Refrigerate until the ganache is set before serving.
