Coffee Pinwheel cookies

I think that for my family, a cookie is the most favorite baked goods. 

Most of the cookies are easy to make, eat and keep. I always have a jar of cookies on my kitchen counter.

And the coffee flavor is the No.1 for one family!!! Esp. my mom, she really loves coffee flavor baked goods, haha. 

But I don't want to repeat the same recipe every time, so you can see that there are many recipes for coffee flavor cookies in my blog ^^

This time is a mini pinwheel cookie recipe. As it's quite small, you can eat more than one piece at a time. 
The best thing about an icebox cookie is you can make it when you have time, and bake it when you want to eat. You can keep it for a month in a freezer (wrap it tightly before freezing it). 



Coffee Pinwheel cookies
Makes 46-48 pieces 


150 g ...................... Unsalted butter
1/8 tsp ................... Salt
75 g ........................ Icing sugar

Coffee cookie dough
1 tsp ....................... Milk
1 1/2  tsp ................ Instant coffee granules
90 g ........................ All-purpose flour

Vanilla cookie dough
1/2 tsp .................... Vanilla extract
90 g ........................ All-purpose flour



Put the butter and salt into a bowl and beat until smooth.
Add the icing sugar and beat to combine.


Divide the butter into 2 parts


Mix the milk and instant coffee granules together.


Put the coffee mixture into 1 part of the butter and mix to combine.


Put the flour into the bowl.


Fold to combine.


Roll out the dough to an 11x 30 cm rectangular.


Refrigerate the dough for 2 hours.


Put the vanilla into the other bowl and mix to combine.


Put the flour into the bowl.


Fold to combine.


Roll out the dough to an 11x 30 cm rectangular.
Refrigerate the dough for 2 hours.


Place the vanilla cookie dough over the coffee dough.


Divide the dough into 2 parts.


Roll each piece to a 15x 20 cm rectangular


Roll the cookie dough Refrigerate for 1 hour.

 Preheat an oven to 180℃


Cut the dough into pieces (8-9 mm. thickness).


You will get about 46-48 pieces. 

Bake in 180℃  Preheated oven for 18-20 minutes.


 Let it cool completely.
