When October comes, I think that most people will think about Halloween ^^. It's one of the fun events for the kids (and the grown-ups).
This time, I made Halloween Brownies by decorating the brownies with melted chocolate to make them look like mummies and spider webs (I love cute Halloween more than the creepy one). I added something special to my brownies too and it's the U.S. White Beans.
I've already posted a cake recipe using it before (if you want to see the recipe just click this link White Bean and Yogurt Bundt Cake), I think it's one of the best ingredients to make our baked goods healthier.
Because when you use the U.S. White Beans, not only you will use less butter, but you also gain more fiber, protein, and micronutrients. Well, I wrote about it before (anyway, I think I want to tell you again, haha), that the U.S. White Beans have plenty of valuable nutrients such as iron and potassium.
They can help lower blood pressure and blood sugar level, and their antioxidant content protects healthy cells from damage. Plus, one study showed that an extract from white beans may help reduce body weight and fat mass too.
Using the U.S. White Beans is easy especially when you use the canned U.S. White Beans, as you don't have to soak or boil them. For this recipe, after rinsing and draining, all you need to do is putting all the ingredients (except the chocolate chips and walnuts) into a food processor and process until the blend is smooth, super easy, right?
Because you use less fat in the brownie, the baking time is essential, don't over-bake it or it will become dry.

White Bean Halloween Brownies
Makes 20x20 cm brownies
250 g ..................... Canned U.S. Navy Beans Beans, rinsed and drained before weighing
60 g ....................... Unsalted butter, melted and cooled
1/2 tsp ................... Vanilla extract
80 g ....................... Maple syrup
25 g ........................ Oats, rolled
45 g ........................ Cocoa powder
1/8 tsp ................... Salt
50 g ....................... Granulated sugar
2 ............................ Eggs
120 g ..................... Chocolate chips
50 g ....................... Walnut, coarsely chopped
............................... White and dark chocolate for decorating
Preheat the oven to 180℃.
Line 20x20 cm pan with baking paper.
Put all the ingredients except chocolate chips and walnuts into a bowl of a food processor fitted with a blade attachment.
Process until almost smooth.
Pour the batter into another bowl.Add the chocolate chips and walnuts into the bowl.
Let the brownie cool completely before cutting into pieces.
Melt the chocolate and decorate the brownie.Let the chocolate set before serving.
