Coffee marble cookie

 I spend a lot of my time in the kitchen (more than in front of the computer) ^^


Because this week my brother will go to visit my sister so I'm happy to bake for her. After non-stop baking for 3 days, there is a load of bread, cookie, and cake in the fridge, haha.
Well, baking is fun, esp. when I can bake everything that I want!!!
I didn't take the photo (and video) of all the things that I made, just baking, and baking, ^^.
Today, it's a cookie recipe again. I make a lot of iced box cookies lately, as it's easy to plan (after freeze it, you can bake it whenever you want), and it's very easy to keep and share too.
As the different brands of instant coffee granules will different in taste, you can adjust the amount of the instant coffee granules to suit your taste.

Coffee marble cookie
Makes 25-27 pieces


115 g ...................... Unsalted butter (Soft)
1/4 tsp .................... Salt
1/2 tsp .................... Vanilla extract
135 g ...................... Granulated sugar
1 ............................. Eggs
1 ............................. Egg yolk
245 g ...................... All-purpose flour
1 tbsp ...................... Instant coffee granules
1 1/2 tsp .................. Hot water
10 g ........................ Corn starch





 Beat the butter with salt and vanilla until smooth.
Add the sugar, and beat until fully combine and lighter in color.

 Add the egg and egg yolk, and beat until combine.


 Pour the flour into the bowl.


  Fold until combine and divide into 2 equal parts.


 Pour hot water into the instant coffee granules, mix to combine.

Mix one part of the dough with the coffee mixture and corn starch.

  Until fully combine.


   Roll both of the dough together into a marble pattern.

 Roll into a cylinder (4 cm in diameter and 25 cm long).

 Cover with baking paper.
Freeze at least 2 hours before using it.
*Can be kept fully covered for 1 month in the freezer.

Before baking, preheat an oven to 180℃.

 Cut the dough into 8-9 mm thickness.

 You will get about into 25-27 pieces

Bake in 180℃  Preheated oven for 20 minutes.

Let it cool completely
