Yogurt Soda Bread

I make yogurt every week lately.


As I use about 2 liters of milk, we have a lot of yogurt in the fridge ^^.  I think that I should use it for making something.
So today, I add it to my soda bread! Soda bread is very easy to make, you don't have to knead, rise and you don't need yeast too.

Actually, if you made scone or biscuit before you will see that the method is almost the same, only that soda bread contains less fat. The soda bread will rise in the oven from the steam that comes from the fat that we cut into the flour, baking powder, and baking soda. For this recipe, yogurt that we add into the bread not only makes the bread moist but it gives a slightly tangy taste to the bread too.

With both whole-wheat flour and oatmeal, this soda bread is very nutty. You can serve with a meal or eat with jam and butter, or even eat it plain, it's delicious on its own!!

Yogurt Soda Bread
Makes 20 cm soda bread


160 g ........................ Cake flour
100 g ........................ Whole-wheat flour
2 tsp ......................... Baking powder
1/2 tsp ...................... Baking soda
1/4 tsp ...................... Salt
45 g .......................... King Rice bran oil shortening
70 g .......................... Rolled Oats
1 ................................ Egg
150 g ......................... Plain yogurt
2 tbsp ........................ Honey
Topping
10 g ........................... Rolled Oats



Preheat an oven to 180℃.


 Put the cake flour, whole-wheat flour, baking soda, baking powder, and salt into a bowl, and whisk to combine.

 I use King Rice bran oil shortening.

 Put the King Rice bran oil shortening into the bowl.

 Mix with a dough scraper, until resembling breadcrumbs.

 Put the rolled oats into the bowl.

 Mix to combine.

 Mix together, egg, plain yogurt, and honey.

 And pour the egg mixture into the flour bowl.

 Mix to combine, and remove the dough from the bowl.

 Press the dough lightly.

  Pat with your hands to form a round ball.

 Press the rolled oats (10g) onto the dough.

  Cut the top of the dough.

Bake in 180℃  Preheated oven for 40-50 minutes.
Let it cool slightly before serving.
