Well, I still have a load of cookie recipes, hope all of you will love to make them too ^^.
Today, it's a butter cookie that comes with both richness from the butter and lovely taste and fragrance of lemon.
Actually, I really love the fragrance and taste of it, and very happy to try any recipes that use lemon, anyway I like the recipe that easy to make.
The original recipe for this cookie needs lemon paste (made by boiling the lemon until softened and puree it), but I don't want to make it! And I think that many of you will have the same feeling as when you want to bake the cookie I think you don't want to wait.
So, I think that by using a lot of lemon juice and lemon zest, you will get a delicious lemon cookie too. And this recipe is the result, the cookie is rich with butter and lemon, that I think it's very delicious, hehe. Lemon Spritz cookies
Makes 15-17 pieces
150 g .......................... Unsalted butter (Room temperature)
................................... Pinch of salt
100 g ......................... Icing sugar
1 tbsp ........................ Lemon zest
25 g ........................... Egg whites
1 tbsp ........................ Lemon juice
170 g ......................... Cake Flour
Preheat an oven to 180℃
Line baking sheets with baking paper.
Beat the butter and salt in a bowl until softened.
Add the icing sugar, lemon zest, and beat until combine.
Pour the egg white and lemon juice into the bowl, and beat until combined.
Pour the cake flour into the bowl.
Fold to combine.
Put the cookie dough into a piping bag fitted with a 1 cm star nozzle.
Pipe onto the prepared baking sheet.
You will get about 15-17 pieces.
Bake in 180℃ Preheated oven for 20 minutes.
Let the cookie cool on the baking sheet.
