Dark beer chocolate cake (Chocolate Stout Cake)

 The first time that I made this kind of cake was when I took a professional chocolate class about 5 years ago, the cake was rich with Stout and chocolate taste.



But after elaborate decorating (chocolate glaze, chocolate rose and etc), I forgot to take the cake home, -*- the people at the school called me while I was on the motorway, so I just couldn't do anything. And it's always on my mind that I have to make it again.
The only problem is I have too many things that I want to do, so it took 5 years, haha until I finally make it at home. I didn't put my effort in the decoration part, but use cream cheese frosting instead, it's both easy and more delicious too. I also adjust the recipe to make the cake moist and softer ^^.
The taste of the dark beer (stout) is very importance, it's good to taste it before using in your cake. The alcohol will be gone after baking, so you can serve this cake to your children too. 


Recipe: Dark Beer chocolate Cake

 Dark beer chocolate cake (Chocolate Stout Cake)
Makes 18 cm cake


Dark beer chocolate cake 
125 g ...................... Unsalted butter
100 g ...................... Dark beer  (stout such as Guinness)
40 g ........................ Cocoa powder
150 g ...................... Granulated sugar
................................ Pinch of Salt
1/2 tsp ..................... Vanilla extract
1 .............................. Egg
80 g .......................... Whipping cream
1 1/2 tsp ................... Vinegar (or lemon juice)
140 g ........................ Cake flour
1/2 tsp ...................... Baking powder
1/2 tsp ...................... Baking Soda
Cream cheese frosting
140 g ........................ Cream cheese
.................................. Pinch of Salt
1/2 tsp ...................... Vanilla extract
115 g ........................ Unsalted butter
105 g ........................ Icing sugar
.................................. Cocoa powder for sprinkle over the cake





Line 18 cm round cake pan with baking paper.
Preheat an oven to 170℃
Mix the whipping cream with the Vinegar


 Put the butter and Dark beer into a saucepan.


 Place over medium heat until the butter melted.


 Pour into a bowl (or you can keep using the saucepan ^^).
Sift the cocoa powder into the bowl. Pour the sugar, salt and vanilla into the bowl.
Stir until combine.


 Let it cool completely before using.


 Pour the egg and whipping cream mixture into the bowl, and mix to combine.


 Sift the cake flour, baking powder and baking soda into the bowl.


 Stir until combine.


 Pour into the prepared pan.


 Bake for 40-45 minutes, or until the toothpick insert into the center come out with few crumbs.
Let the cake cool completely on a wire rack.



 Beat the cream cheese with a pinch of salt and vanilla extract until smooth.
Put the butter into the bowl, beat to combine.


 Add the icing sugar gradually.


 Beat until smooth.


 Slice the cake into 2 pieces.


 Spread 1/3 of the frosting over 1 piece of cake.


 Place another piece of the cake over the frosting.


 Spread the rest of the frosting over the cake.


Sprinkle with cocoa powder before serving.
