You can find it everywhere in Thailand, as it's one of our favourite street food. But you can make it at home very easily, and you don't need any special ingredient, or equipment. It's fun to make, esp. when trying to roll the dough as thin as possible. I rarely eat very sweet dessert, but for this one sweetness is the key, hehe. Imagine crispy fried dough (Ok, load of oil too), with soft and sweet banana filling, it's the best of the world.
If you don't have sweetened condensed milk, chocolate sauce is another good option to drizzle over the banana roti too.
Serve this super calorie packed dessert with a cup of black coffee can make you enjoy more pieces of it ^^.

Thai Banana Roti
Serve 3-4 people
Roti dough
130 g ..................... All purpose flour
1/2 tsp .................... Salt
50 ml ...................... Water
1tbsp ....................... Granulated sugar
30 g ........................ Eggs
15 g ........................ Rice bran shortening (non-hydrogenated rice barn oil shortening or rice bran oil)
................................ Rice bran oil for covering the dough
Filling and topping
2-3 .......................... Ripe bananas, cut into thin slices
................................ Butter
................................. Granulated sugar
................................ Sweetened condensed milk
Put the flour, sugar, and salt into a bowl, whisk to combine.
Pour the water and egg into the bowl.
Note: if using oil, pour into the bowl with the water.
Mix until moisten.
Knead until dough formed.
Remove from the bowl and knead until smooth (the dough will be sticky).
Rice bran shortening (non-hydrogenated rice barn oil shortening).
Until smooth.
Cut into 3 equal pieces.
Roll each piece into a ball.
Pour the oil into a bowl.
Let it rest for 1 hour.
Heat the pan over low heat.
Spoon the oil from the dough bowl onto a pan.
Remove the dough from the bowl, press and roll to 23-25 cm square.
Fry the dough for a minutes.
Place a piece of butter (about 1/2-1 tbsp) on the dough.
Sprinkle with sugar.
Place banana on the center of the dough.
Drizzle with sweetened condensed milk.
Fold each side of the dough to cover the filling.
Fry until fully cook on both sides.
Remove from the heat.
Cut into pieces.
Sprinkle with sweetened condensed milk and sugar before serving.
