Chocolate chip Snack Cake

 Want to eat cake but don't have any egg left, this recipe can help you with that situation, it an easy one bowl cake, that you can make without egg ^^.


And you can turn it into vegan cake by skipping the chocolate chips or use the vegan chocolate instead.  Brown sugar and vinegar are the acid that activate the baking soda in this recipe, and after mixing them together don't wait too long before putting it into the oven. 
You can put the ingredient into the bowl and push the tare button after each one, with that way you can use only 1 bowl!
If you plan to serve this cake from the oven, let the cake set at least 15 minutes before removing it from the pan, as it's quite soft when it's hot.

 Chocolate chip Snack Cake
Makes 18x18 cm cake


190g ............................. Cake flour
175g ............................. Brown sugar
3/4tsp ............................ Baking soda
1/4tsp ............................ Salt
165g .............................. Water
55g ................................ Rice bran oil
3/4tsp ............................ Vinegar
1/2tsp ............................ Vanilla extract
80g ................................ Chocolate chips
2tbsp ............................. Granulated sugar

Preheat an oven to 180C.
Line 18x18cm pan with baking paper.


 Put the flour, brown sugar, baking soda and salt into a bowl.


 Whisk to combine.


 I use rice bran oil.


 Pour the water, oil, vinegar and vanilla into the bowl.


 Whisk to combine.


 Pour half of the batter into the prepared pan.
Sprinkle with 40g of the chocolate chips.


 Pour the rest of the batter into the pan.


 Sprinkle with the rest of the chocolate chips and granulated sugar.


Bake for 30-35 minutes or until the top spring back when touch lightly.
Let the cake cool in the pan for at least 15 minutes if you want to serve warm.
