Well for me the high calorie is not the problem, haha, as long as it's delicious. But I think I love the texture of baked doughnut too, it likes a little cake with firm crust.
By adding chocolate glaze, your doughnut is not only more yummy, but you can make it more cute by adding colorful topping. For the people who's allergic to milk product, you still can enjoy this doughnut, by changing the milk in both doughnut part and glaze to nut milk ^^

Baked Doughnut with chocolate glaze
Makes 12 pieces
Baked doughnut
120g ................................. Shortening ( I use non-hydrogenated rice bran oil shortening)
120g ................................. Granulated sugar
1/4tsp ................................ Salt
1 ........................................ Egg
1/2tsp ................................ Vanilla extract
165g .................................. Cake flour
15g .................................. Almond powder
1tsp ................................... Baking powder
120ml ............................... Milk
Chocolate glaze
280g .................................. Icing sugar
40g .................................... Cocoa powder
60-70ml ............................ Milk
2tsp .................................. Vanilla extract
Preheat an oven to 180C
Brush doughnut pans (8cm.-12 pieces) with shortening.
Shortening ( I use non-hydrogenated rice bran oil shortening)
Pour the sugar and salt into the bowl and beat until fluffy.
Put the egg and vanilla extract into the bowl and beat until smooth.
Sift the flour, almond powder and baking powder into the bowl.
Fold to combine.
Pour the milk into the bowl.
Mix until smooth.
Put into a piping bag fitted with 1.5cm round nozzle.
Pipe into the prepared doughnut pans.
Bake for 15-18 minutes.
Let the doughnut cool on a wire rack before glazing.
Make the chocolate glaze:
Sift the icing sugar, and cocoa powder into a bowl.
Pour the milk* and vanilla extract into the bowl.
You can add more milk to make the glaze thinner if it too thick.
Mix until smooth.
Dip the doughnut into glaze.
Let it dry on a wire rack.
Or decorating it as you wish before letting it dry.
