For this raisin bread, you don't have to do anything except hold the hand mixer, hehe. Yes, this bread is hand mixer bread, just pour all the ingredients into the bowl and beat them with electric hand mixer, that's all you have to do.
Anyway, you still have to wait for the yeast to work, but it's shorter than other bread recipe, as this bread needs only 1 rising time. You need to let the dough rise until almost double in size before baking (well, you can do anything else while waiting ^^). The time that you need will depend on the temperature the hotter the quicker.
As this bread has more liquid so the texture of the bread is lighter, but it's delicious in its own way plus it's very easy to make, you can make it even you never bake bread before I promise.
No-Knead Raisin Bread
Make 1 loaf (25x10cm)
250g ............................. Bread flour
5g ................................. Salt
2 ................................... Eggs
150g ............................. Milk
40g ............................... Water
30g ............................... Melted and cool unsalted butter
30g ............................... Granulated sugar
6g ................................. Instant yeast
160g ............................. Raisins
...................................... Melted butter for brushing the bread after baking
Line 25x10cm loaf pan with baking paper.
Put egg, milk, water, melted butter, granulated sugar and yeast into a bowl.
Beat to combine.
Pour the flour, and salt into the bowl.
Beat for 5 minutes.
Pour the raisins into the bowl.
Mix to combine.
Pour into the prepared pan, cover with plastic wrap.
Let it rise until almost double in size (about 1 hour).
Meanwhile an oven to 200C.
When the bread is ready, put into the oven and bake for 20-25 minutes.
Remove from the oven, and brush with melt butter.
Let the bread cool before slicing.
