I have a plan that I will make fruit cake this month but I forgot to marinated the dried fruit, and I have no time left -*-. Anyway I still want to eat fruit cake, and the only way is making quick fruit cake. The one that doesn't need anything more than dried fruits, and liquor!
This cake is not a traditional fruit cake, it's rum cake with dried fruit, hehe. With a lot of rum, this cake is the best for people who love liquor (and it's ME). Because it need a load of rum. be sure to use the one that you love, the one that you can drink it by itself is the best. If you don't have dark rum, other kinds of liquor can be used too.
This year will end in less than a week, there are a lot of things that I want to start next year, like making my own cookbook (handmade one ^^), writing diary and etc. New year is the best chance to looking back on the past and start a new goal, I can't wait for it now.
Fruit Rum Cake
Make 20x8 loaf cake
100g .............................. Dried fruit (I use Cherry, fig, raisins, cranberry and orange), cut into small pieces
80ml .............................. Dark rum
100g ............................... Salted butter
50g ................................. Brown sugar
50g ................................. Granulated sugar
2 ..................................... Eggs
130g ............................... Cake flour
2/3 tsp ............................ Baking powder
40g ................................. Orange marmalade
For soaking and decorating
1tbsp .............................. Orange marmalade
30ml .............................. Dark rum
........................................ Dried fruits and nuts
........................................ Strained orange or apricot jam
Mix dried fruit and dark rum together.
Let them soak for at least 1 hour.
Preheat an oven to 180C
Line 20x8 cm loaf pan with baking paper.
Sift the flour and baking powder together.
Beat the butter until smooth, add both kinds of sugar, beat to combine.
Add the eggs gradually, beat to combine.
Pour half of the flour mixture into the bowl with Orange marmalade and fruit mixture.
Fold to combine.
Pour the rest of the flour mixture into the bowl and fold to combine.
Pour the batter into the prepared pan.
Bake for 40-45 minutes or until the top of the cake spring back when touch lightly.
Let it cool in the pan for 10 minutes.
Mix 30ml of the rum with 1tbsp Orange marmalade.
Warm in the microwave until the jam melt.
Brush the cake with Orange marmalade mixture.
Let it cool completely.
Decorate with dried fruits and nuts, and brush with Strained orange or apricot jam.
