I love to make this kind of cake, it's easy but its look is show stopping ^^. Pink mousse with red jelly, and fresh fruits, you must think that I spend a day to make!
Start by crushing the biscuit and mix it with melted butter, and put it into the cake pan, now you got the base (very, very easy, right?). The for the filling, just make the coulis (the mixture of puree strawberry and sugar), and mix it with gelatine, now you get both red jelly for the top and the fruit base for making the mousse. You can use fresh or frozen strawberry, there are on problem.
For the strawberry that you use for line on the side of the cake, I suggest choosing the small size strawberries will make the cake more beautiful ^^.
Easy Strawberry Mousse Cake
Makes 18 cm cake
Base
95g ................................ Digestive biscuit
45g ................................ Salted butter, melted
Filling
300g .............................. Strawberry (you can use fresh or frozen)
72g ................................ Granulated sugar (A)
8g .................................. Gelatine powder (about 2 1/3tsp)
35ml .............................. Water
30g ................................ Granulated sugar (B)
250g .............................. Whipping cream
For decorating
9-12 ............................... Fresh strawberry for filling
........................................ Fresh fruits
Pour into 18 cm, loose base pan and press until level.
Refrigerate while making the mousse.
Pour the gelatine powder into a water, let it soften for at least 5 minutes.
Pass through a sieve into a bowl.
Take a bowl to the microwave and warm until hot.
Heat the gelatine mixture in the microwave at low power for 15-20 seconds or until hot. Stir until melt.
Stir to combine.
Remove 100g of the mixture for covering the cake.
Let the mixture cool before using.
Line the side of the pan with plastic sheet, and place the strawberries on the side of the cake pan.
Whip the whipping cream with granulated sugar (B), until soft peaks formed.
Fold 1/3 of the whipped cream into the strawberry mixture.
Then pour it back into the whipped cream bowl.
Fold to combine.
Pour into the prepared pan. Tap lightly to smooth the top.
Refrigerate for 2 hours.
Remove the cake from the fridge, and pour the rest of the strawberry mixture over the mousse.
Refrigerate for 4 hours or until fully set.
Decorate with fresh fruits before serving.
