For your sweet Valentine's No.1: Fresh strawberry rare cheesecake

 Welcome to month of love!,  yes, when talking about February, you have to think about Valentine's day.


Last month, I spent most of my time sleeping, ^^" because I had a cold, but I just couldn't stop about cooking or baking, so I have a lot of idea for this lovely month. All I want to do is make this month as sweet as possible, hehe. Because Valentine's day is for everyone, not only lovers. 
As I promise, that I will post the recipe that you want to make for your sweet Valentine's day ^^, and this is the first recipe "Easy and super cute cheesecake".This cheesecake is (very, very) easy to make, you don't need to use the oven as we use the gelatine to set it, and this one has no raw egg too.
The only thing that you have to remember is this cake has to be eat soon, as it contains the fresh fruit. But you can prepare it one day ahead, remove the cake from the pan and decorate before serving.

 Fresh strawberry rare cheesecake
Make 15 cm cake


Base
60g ................................. Digestive biscuits
40g ................................. Butter, melted

Cheesecake
200g ............................... Cream cheese
60g ................................. Granulated sugar
140g ............................... Strawberry puree
1tsp ................................ Lemon juice
100ml ............................. Whipping cream (A)
5g ................................... Gelatine powder
30ml ............................... Water
50ml ............................... Whipping cream (B)

13-15 .............................. Fresh strawberries 




 Put the Biscuits into a ziplock bag, and crush with a rolling pin.
Mix the biscuit crumbs with melted butter.


Pour into 15 cm loose base pan, and press until level.
Refrigerate while preparing the strawberries


Hull and cut strawberries in half, and arrange them in the prepared pan.
Refrigerate until ready to use.


 Mix the gelatine powder with the water, let it bloom for at least 5 minutes.


 Beat the cream cheese and granulated sugar until smooth.


 Pour the bloomed gelatine into whipping cream (B).
Warm in the microwave for 30 seconds (medium power), and stir until smooth.


 Pour the gelatine mixture into the bowl, beat until smooth.
Pour the whipping cream (A), strawberry puree and lemon juice into the bowl.


 Beat until smooth.


Pour into the prepared pan and refrigerate over night.
The next day:
Warm the side of the pan with blowtorch, and remove the cake from the pan.
Decorate as you wish.
